Grilled 'Fusion' Pork Chops

This is an excellent marinade recipe - my chops were tender & delicious - my whole family loved them! I can't wait to try it on pork tenderloin, too.

Grilled Tuna

Very good - the tuna was moist & flavorful. Cooking time depends on the tuna that you are working with & the temperature of your grill - my tuna took 5 minutes each side.

Turkey Goulash

I thought that this was a good base recipe, but I only used 10 oz of turkey instead of a pound and there was way more than enough meat - too much, really. Next time I will double up on the tomato and other ingredients then freeze the leftovers for another day.

Garlic Chicken

This is a great recipe & it will go in my "family favorite" folder! I didn't have bread crumbs on hand so I used fine cracker crumbs instead - I'm sure that this kept the breading from being "loose", as one person described it. It was nicely crispy & I will probably always substitute the cracker crumbs for the bread crumbs.

Outrageous Chocolate Chip Cookies

These melt in your mouth and are absolutely wonderful! I doubled the batter but didn't change a thing with the recipe. I will be bringing these to our holiday potlucks this year at work!

Sweet Potato Bird Balls

My macaw loves these! I used mixed tropical fruit bits instead of just raisins and added some chopped walnuts - he ate 3 of them while I was still rolling them and declared them to be "gooooood yum!" - his highest compliment. These will be a staple in his diet. Thanks for a great recipe.

Colcannon Bake

This will be my healthier alternative to scalloped potatoes. I had some left over ham and added maybe 1/2 cup of it to the recipe, used small red potatoes with the skins on for more nutrition & color, and used a coleslaw/carrot ready mix. Also used vegetable broth because I had it on hand & it enabled me to cut down on the butter. It was very colorful & a bit healthier with these changes - but as I stated in the beginning, this turned into an alternative to scalloped potatoes. I will follow the directions "as is" for the next Irish meal that I make.

Aunt Carol's Spinach and Fish Bake

This recipe was pretty good. I think I may have squeezed the spinach too much as the spinach was a bit dry, but the fish was moist. I'll try it again, leaving the spinach a little wetter. Nice change of taste!

Risotto with Truffle and Parmesan

This is a great recipe and I will definately make it again! I followed the recipe exactly - no deviations - & it turned out perfectly. It does take time and you must stay on top of the stirring so it won't often make the week night rotation for us, but it's an excellent choice for special occassions or a Sunday dinner.

Fish Chowder

Very nice and easy recipe. I had to leave out the mushrooms because my husband doesn't like them (unless he can't actually see them). He's a native New Englander and said that it was as good as any he'd ever tasted - high praise!

Feta Cheese Turkey Burgers

Cinnamon Apple Sweet Potatoes

I've made this for a few years now and it's a wonderful recipe - it's become a tradition in our family. My method is a little different than the recipe as I don't like to boil the sweet potatoes and lose ANY nutrients, so I slice the sweet potatoes and apple about 1/4" thick, then layer them starting and ending with potatoes. I allow my layers to be "porous", not covering ever speck of space so that the sauce can meander throughout. This year I used Honeycrisp apples, so reduced the sugar to a scant cup as they are sweet & tried adding vanilla as another reviewer suggested. I bake it until the potatoes are tender, not really caring how long it actually takes - an hour or so. Excellent!
