I just made these for my daycare kids. I think the beauty of this recipe is it is easily adaptable. I had some left over buttermilk and used that. I used brown sugar, as it seems like it always works well with bananas. I did add vanilla, as many had suggested and also used half whole wheat flour. They turned out great! Instead of syrup I served them with vanilla frozen yogurt, which kind of melted over them and then a tiny bit of chocolate syrup. Regular syrup did not do them justice. Easily could have been served as a more gourmet item at a bed and breakfast. Thanks for the recipe!
