Black Bean and Corn Quesadillas
Saw the recipe this morning, made it tonight. Five stars and a huge BRAVA! I live in Italy and so the Monterey Jack cheese and black beans weren't available. I substituted fresh provolone cheese and a can of Mexican chili beans and it was still a fantastic recipe! With each bite, you got a taste sensation ride between sweet, salty, and an after kick that said, "Go in for the next bite!" Served it with a Ca' del Plin white wine from Nieve, Italy and some leftover chocolate Torta Caprese. It made a perfect quick last-minute supper with some friends. Thank you!

Red Velvet Cake with Buttercream Frosting
I am giving this only two stars because the buttercream frosting is decidedly lacking - it is overly sweet and leaves a waxy aftertaste on the tongue.

Roasted Rack of Lamb
This was my first time serving lamb at a formal table (filled with Italians who are famous for their culinary discretion). It was a major hit and the overall adjective was 'exquisite'; the highest compliment an Italian knows how to give for their food. This recipe is a winner! The only change I made was on the cooking temperature and times at the suggestion of my butcher: 390F, 200C for 55 minutes on a rack for 8 people. A longer cooking time gave me the opportunity to enjoy cocktails as well as the first soup course with my guests and the lamb was ready to serve at just the right time. I served it with a mint sauce.
