I started cooking about 15 years ago when my uncle ridiculed me for not being able to do anything except make toast. And I discovered that I truly loved to cook. I spend a great deal of time in the kitchen and my husband and son greatly benefit from this. All meals in my household are made from scratch. No canned or frozen foods here. My in-laws are Italian and make everything from sausages to cold cuts to jared tomatoes (for a sauce) from scratch as well.
My favorite things to cook
My favourite things to cook (in no particular order) are: Pizzas (many different kinds); Eggplant Parmesan; Breaded Veal (or Chicken) Cutlets in a fresh Tomato Sauce; Chicken Rolls Stuffed with Mushrooms, Spinach and Mozzarella Cheese; Roasted Potato Wedges smothered in a Bread Crumb/Oil/Garlic/Fresh Herb Mixture; Lasagna (no meat); Pasta Amatriciana (pasta in a red sauce with onions and pancetta); Veal Rolls with Parma Prosciutto; Scalloped Potatoes; and many more, but these are the dishes that immediately come to mind.
My cooking triumphs
Homemade Cinnamon Buns that I made at Christmas time which took me 2 days to make!
My cooking tragedies
Risotto. I had to make it 3 times before I was finally able to get the correct consistency and timing mastered.
