Portobello Port Sauce for Steak

I followed the directions of another reviewer and switched out the port with a 3-3-3 mix of red (Cahors in my case) soy and water. FAn-ta-bu-lous, loved by all. I'm confident it'll be good with port too, when I have some on hand. Thank you!

Pasta with Scallops, Zucchini, and Tomatoes

We thought this was fab. I also resorted to a can of petite diced tomatoes with olive oil and garlic cuz the tomatoes I had disappeared! I found I had to make a cornstarch slurry to thicken the sauce to the consistency we like. Healthy, light, very tasty, sure to be added to our rotation. I wish I could upload the gorgeous pic I took on my Bberry...oh well.

Spicy Italian Salad

OK, but not spicy. We served it as is to the kids, then spiced up the adult version by adding harissa diluted in a little water. That was an improvement. I think I'll use spicy marinated olives and artichokes next time to get the spiciness promised in this recipe.

Mini Frittatas

I like the flexibility of this recipe. I used bruschetta instead of salsa, and so I used oregano instead of cumin (1/2 tsp.) and, having no ricotta, I used cottage cheese. It was great! The kids want me to make two pans the next time. Possibly due to the ingredient switch-ups, it took a good five minutes more too cook than stated (fully 30 minutes). Next time I'll also top them with a dollop of sour cream and tomato mix, as shown in the picture. Thanks for an easy, inexpensive weeknight dinner, with a side salad it was light and fresh!

Brown Sugar Instant Oatmeal Muffins

Quick and easy, but bland, despite adding vanilla and more sugar. I used strawberry-vanilla instant oatmeal because that's what I had. I used an extra egg and the texture is great, but I should have put cinnamon in the batter as well as the topping.

Cream of Spinach Soup

Good basic recipe. I added 3 pinches nutmeg and 2 large crushed cloves garlic (for 2lb spinach, doubled the recipe) and this time skipped the roux and just thickened with a cornstarch slurry and some cream. I garnished it with crumbled Havarti cheese and that was a great addition. Because I used Campbell's chicken broth out of the box, I hesitated about salt and we found I should still have added some, but it was all right when we all salted at the table.

Chef John's Italian Meatballs

These are THE go-to recipe for meatballs. Served in a red sauce on linguine tonight; will serve again with toothpicks with beer, on fettucini alfredo, with spaghetti aioli, in red sauce in a sub bun... thanks John.

Awesome Baked Sea Scallops

I put in 5 cloves of garlic, but used 36 scallops. Doubled everything except for the topping, which was pronounced at our table to be awesome. This is a definite keeper, both for ease and awesomeness :)

'Chinese Buffet' Green Beans

I left off the sugar, used Asian ingredients as the poster mentioned. I also stir-fried some slivered almonds in the peanut oil first, and added several drops of sesame oil. Next time I might fine-dice some onion as well. Thanks so much, this was just perfect with my honey-garlic wings.

Vinegar Grilled Chicken

OH wow, oh yum, I'm a convert. I usually eschew the breast of the chicken because it's too dry, but this recipe made the meat tender, juicy and so tasty. Marinated 24 hours, made the following modifications to suit personal taste: 1 Tbsp garlic powder + 1/2 Tbsp sea salt instead of garlic salt; about half the hot sauce due to kids; and EVOO instead of butter. What decided me to try this recipe on some chicken breasts I was unsure what to do with was another reviewer's comment that this recipe gave the chicken the tang you usually only find in restaurants. Very true, and as a result this will go into my regular rotation.
