Eggplant Parmesan I

I have to say, there are a couple of problems with this recipe as is. First off, I ended up using four eggplants, intead of one. I would have only been able to complete one, maybe two layers with one eggplant. Next, the recipe calls for WAY to much basil. I used 1/4 of what was called for, and I still felt like it was too much. Finally, I left the eggplant "sweat" for more than 3 hours, and I still think it could have used longer. The end result was fair, and it did take a rather long time to brown the eggplant, and assemble the dish.

Mom's Pretzels

Creamy White Wine Sauce

My Husband loved this, even though he is not a big sauce man. We don't have heavy cream in the house, so I used whole milk instead, and it was nice. Not too heavy. I added it to penne, chicken and brocoli. It was a nice simple meal,and the wine adds a nice flavor. Will be making this again!

Bill's Blue Cheese Dressing

Great dressing. I've used it with almost everything, buffalo wings, veggie platter... It's great for the "wedge salad" you see in many restaurants as well. Cut a head of iceburge lettuce in quarters. Place one quarter on each plate and top with the blue cheese dressing. Top with additinal crumbled blue cheese and crumbled bacon, and add a few grape tomatoes on the edge, and you've got a tasty elegant first course.

Mom's Pumpkin Pie

My husband is a huge pumpkin pie fan, so I've been looking for a great recipe, and unfortunatley, this is not it. First off, it took a lot longer than expected for the center to set, and by that time my crust was browner than I would have liked. Secondly, the spices in the filling just weren't right. There were too many spice flavors, perhaps it was the clove. Oh well, I guess I will continue to search.

Crab Dip

This is one of my husbands favortites, and he is quite the picky eater. It has become a must at every party we have, and at times, he'll want to make it as dinner! The nice thing about the recipe for parties, is that you can make the dip the night before and store it in the 1 quart baking dish in the fridge over night. Then, when it's time for the party, just pop it in the oven. Very easy, and delicious!

Butter Flaky Pie Crust

I have found my standard pie crust! THANK YOU! This is a great recipe to have on hand for a great yummy crust. I followed suit with the other "raters" and only chilled for 1 hr the first time, and it turned out great. I grew increasing impatient, and only chilled for 30 minutes the next time. It was a bit harder to roll out, and it didn't get as flaky... I will certainly plan on at least 1 hr chill time in the future.
