Cowboy Oatmeal Cookies

Reviewed: Jul. 12, 2008
I must need my head examined since I made these today in the blistering heat. But, these caught my eye when I was reviewing the contents of my recipe box and I just had to make them. I'm very glad I did; these are great, and as previous reviewers have said... there's a slight crisp to the outside and a yummy chewy center. Maybe the butterscotch chips made for an extra sweet cookie, but I think I'll try reducing the amounts of sugar next time as well as the amount of oil. The dough was slightly greasy, although it had no effect on the final outcome. I used 1 1/2 c brown sugar and 1/2 c white sugar. Oh, and I also added french vanilla extract. Thank you for posting!

Rosemary Shortbread Cookies

Reviewed: Jul. 7, 2008
Holy Goodness! These are off the charts! I am so happy I found this recipe. Followed recipe exact - but, forgot the salt. No matter, as these are divine. I liked the suggestion from artychoke who rolled the dough into a log, chilled and sliced. Mine needed longer than an hour to be really chilled and firm. Definitely a keeper. Thank you so much for posting this recipe!

Szechwan Shrimp

Reviewed: Jul. 4, 2008
Excellent! This is worthy of a repeat performance for sure. I didn't find it overly spicy at all. Next time, I'll double or triple the sauce as the recipe doesn't make much. Thanks for posting!

Creamy Pepper Dressing

Very nice. Couldn't have been any easier. Love that it doesn't have all that 'junk' like bottled salad dressings.

Not worthy of a repeat performance, imo. Needs seasonings besides just onions.

Playgroup Granola Bars

Winning recipe! I added mini morsels and shaved off 5 minutes to the baking time and these were divine. I love this recipe's simplicity and versatility. It's definitely going into the front of my recipe box. Thanks for posting this recipe!

Honey Mustard Dressing I

Reviewed: Jun. 18, 2008
Nice! Flavors were just right for me - I scaled recipe to 4 servings and didn't change a thing other than to cut back on the dill (not a big fan). Great as a dressing to add a little zip to my wrap. LOVED the addition of soy sauce. It's a keeper for me.

Soft Sandwich Buns

Reviewed: Jun. 10, 2008
I think I'm in love with this recipe. That's saying a lot coming from a novice bun baker! This is actually the second bun recipe that I've tried on this site and I think I'm going to stop searching. These are sooooo good. I brushed tops with melted butter then added a variety of toppings like sesame seeds, poppy seeds and pizza spices. Yummy! Thanks for posting this great recipe!

Burger or Hot Dog Buns

Reviewed: Jun. 3, 2008
I'm so happy to find this recipe! I've never made homemade buns before and this couldn't have been any easier. I used my bread machine through step 3 and then shaped them into buns and baked with an egg white wash and sesame seeds atop. I followed the recipe exact with two exceptions: used 1/2 whole wheat flour/1/2 ap flour and for the milk, I used buttermilk. They look and taste wonderful! Thank you for posting this recipe!

Chocolate Velvet Ice Cream

Reviewed: May 31, 2008
Uh-oh... I could see how this could become addicting. It is absolutely wonderful and so easy to make. I chose to increase the cocoa as other reviewers had suggested and also added a splash of vanilla. I used 2/3 cup half and half and the rest heavy cream. I cut the sugar to 1/2 cup. I finely grated some of the chocolate and some I left as slightly larger chunks, the size of mini morsels. Decadent! Thank you for posting this recipe!

Yin-Yang Salmon

Reviewed: May 26, 2008
More like 3 1/2 stars. I could handle the hot sauce; that I liked. It was the sweetness level that I didn't care for. I'd be apt to drop the brown sugar amount down if I were to make this again. I also didn't taste anything else other than the hot sauce and sugar. Just okay. Thanks, though, for letting me try!

True-Blue Potato Salad

Reviewed: May 26, 2008
A nice twist on traditional potato salad. I scaled recipe for 4 and used gorgonzola instead of blue cheese, regular onion for green and omitted celery as I did not have any. Next time, I'll be sure to add that to provide a little more color and crunch. You have to really be a fan of blue/gorgonzola to like this. I only added salt to taste. I think I might like it with more mayo, but I'll hold out 'til tomorrow after it's been completely chilled. Thanks for letting me try!

Crustless Spinach Quiche

Reviewed: May 25, 2008
OK, but it needs some tinkering with additional spices - I used oregano and garlic and onion powder. Be sure to really drain the water out of your spinach; I didn't do a very good job of it and was left with a little liquid pool at the bottom of the plate.

Curried Tuna Melt

Reviewed: May 21, 2008
This was good, but 1/4 tsp of curry powder was almost a negligible amount in my humble opinion. Maybe I'm into curry more than others, but I felt it needed more and, as a result, doubled the amount. Nice and easy recipe that hit the spot, so thank you for posting it!

Five Minute Ice Cream

Reviewed: May 21, 2008
Oh Happy Day! This is wonderful! I placed it in the freezer and had a hard time waiting for it to firm up, since I kept taking a taste here, a taste there. Gotta make sure it's good before I offer it up to guests, right?! I wanted to share that I used nonfat plain yogurt in place of the heavy cream (and also added a splash of vanilla)and saved a lot of calories as a result. Think I'll reduce the amount of sugar next time to see how that comes out. Wonderful recipe; thank you so much for posting it!

Cran-Orange Bran Muffins

Reviewed: May 19, 2008
Nice flavors. I subbed applesauce for the butter and wished that I hadn't as it gave the muffins that 'rubber bouncy ball' feel/texture to them that's commonly found with lowfat/no-fat baking. Next time, I'll just use the butter as it's a small amount; this is a more healthy muffin recipe anyway. Without changing/subbing ingredients, each muffin is 3 points on Weight Watchers. Very filling, very satisfying. Thanks for posting the recipe!

Absolutely Fabulous Greek/House Dressing

Reviewed: May 18, 2008
Really great! And, MUCH better than my favorite local restaurant's dressing. I love this since, because everyone's tastes are different, you can tweak it to your own personal preference. I know that next time, I'll try fresh basil and a pinch of sugar and maybe some red pepper flakes. I can't wait to use it as a marinade. It was nice to scale it down to 10 servings so that I could see if I would like it; obviously, this one's getting made again! Thanks for posting this recipe!

Toffee Caramel Squares

Reviewed: May 18, 2008
4 stars because, although they're tasty, I found the instructions lacking/misleading. You really do need to wait til the caramel sets up (or refrigerate it for quicker results) before you go ahead and spread the chocolate on top. Very rich, so cutting them into small pieces works great and you end up with lots! Thanks for letting me try.

Shrimpcargot

Reviewed: May 18, 2008
Yummy in my tummy! Actually, I only had 2 of the 6 that I made as I thought I'd be nice and surprise my mother with the remainder (as well as the toffee caramel squares from this site)for a light "lunch"/snack. She ate all of them in one sitting! LOL... I think I would do the same as others have posted as far as adding some italian style bread crumbs or maybe add some oregano to the garlic butter. Either way, this is a fast, easy, delicious recipe! Thanks for posting!
