Parmesan Garlic Bread

Reviewed: Oct. 26, 2008
With some modifications, this could be worthy of 5 stars. The bread came out a tad bit on the dry side, but the flavors were nice. I used French bread and am wondering if there was too much of it to cover with the butter spread. I used softened butter, not melted and opted for minced garlic in addition to 1/8 tsp of garlic powder.

Roasted Garlic Mashed Potatoes

Reviewed: Oct. 19, 2008
This imparted such a nice mild garlic flavor to everyday mashed potatoes. I may add more garlic next time, but this made a great side with grilled swordfish. I added a touch of cream in addition to the milk to make them extra creamy. Thank you for posting this recipe!

Soft Gingersnaps

Reviewed: Oct. 19, 2008
Nice! First time making gingersnaps and these will definitely make a repeat appearance. The dough handled beautifully - I'd like a spicier cookie, so may opt to up some of the spices. All in all, these were great! Thank you for posting this recipe!

Spicy Grilled Swordfish

Reviewed: Oct. 19, 2008
Was a good introduction to swordfish, although it was hard to detect the marinade. I might choose to let the steaks marinade for longer next time. They also needed more time on the grill - thank you for letting me try.

Cajun Chicken Pasta

Reviewed: Sep. 30, 2008
Was passable as something quick and easy to throw together, but didn't wow me as I expected based on all the positive reviews. I subbed Morningstar Farms Chik'n Strips which I wouldn't do again. :/ Sauce came out thin, so I added a bit of potato flakes. And, with all the spices, I was expecting it to be a lot more flavorful. Probably won't make again. Oh well, thanks for letting me try.

Flax and Sunflower Seed Bread

Reviewed: Sep. 28, 2008
So stinkin' good! The taste is superb! I mixed this in my Kitchen Aid and let rise twice before baking at 350 for about 40 minutes. I did grind the flax seed before adding. Best bread ever! Thank you for posting this recipe!

Buttery Rolls

Reviewed: Sep. 16, 2008
OMG, I LOVE these! I can't really add any more that hasn't already been said about this recipe - other than to say they are truly fabulous. I did have to add a smidge more flour, but they rose up beautifully and are even nice and soft the next day. I let them rise for a good 45 minutes to an hour before baking. Thank you so much for posting this recipe!

Veggie Skewers

Reviewed: Aug. 24, 2008
This is, hands down, my favorite way to grill veggies. The marinade is unbelievably good! We added onions to the skewers but my absolute fave were the mushrooms. The only thing we would change would be the grilling time - We opted to turn up the heat and grill the veggies covered; seemed to work better that way, you just need to watch more carefully as cook time is faster. We're going to marinade tuna steaks with this marinade since it's sooo delicious! Thank you so much for posting this recipe!

Brazilian White Rice

I guess I was hoping for something more exciting based on the reviews. I'm not sure I would make this again. Thank you for posting and letting me try, though!

Portobello Sandwiches

Reviewed: Aug. 19, 2008
These were great, especially with the caper mayonnaise which really made this recipe. I think I'll look for a better balsamic vinegar since what I have on hand is a cheap version and I found it didn't lend itself very well to this recipe. I also want to experiment with other options - maybe a little soy sauce instead. Thank you for posting!

French Baguettes

Reviewed: Aug. 17, 2008
Great recipe for a first time french bread baker! I made this in my Kitchen Aid and truly felt like Martha Stewart this afternoon. :) I'll try misting the oven next time. Mine didn't rise as much as I would have liked, but good enough for my basil, tomato, and mozzarella sammie! Oh so good! Thank you for posting!

Sophie's Zucchini Bread

Reviewed: Aug. 17, 2008
Pretty good, although next time, I think I'll shave off about 5 minutes baking time as I found it to be a bit dry. I also should have trusted my gut and lightly sprayed my loaf pans as they were somewhat difficult to get out.

Basil Butter

Reviewed: Aug. 16, 2008
Pretty good! I added some parmesan cheese and used this for our grilled corn on the cob. It was a nice change from the usual plain butter and s & p. Thanks for posting!

Raspberry Custard Kuchen

Reviewed: Aug. 13, 2008
Very good and really easy to throw together. Like many others, this seemed to take forever to bake. I started checking at 45 minutes, but wound up needing to bake it for over an hour. Delicious, though... I am enjoying it served cold with a little sprinkle of confectioner's sugar on top.

Basil Shrimp

Reviewed: Aug. 9, 2008
Absolutely fantastic! We'll definitely make this again. I used all olive oil and only marinaded for 25 minutes. I almost decreased the amount of mustard based on some of the reviews, but opted to go with the suggested amount of 1 T and was really glad I did. I was looking for a way to use some of the basil in my garden and this fit the bill. Thanks a bunch for posting!

Roasted Vegetables

Reviewed: Aug. 2, 2008
Perfection! This was everything I expected it to be. I used sweet potatoes, red potatoes, onion, mushrooms, and green peppers and used a combination of dried and fresh herbs. Don't be afraid to liberally sprinkle more seasonings to your taste; I found I had to add more s & p and a touch of garlic powder. Oh, and I also added a splash of lemon juice. I opted to turn the heat down to around 430 and roast the potatoes and onion first, then after about 35 minutes, I added the mushrooms and peppers. Very very good! Thank you for posting this recipe!

Tomato Bread Salad

Reviewed: Jul. 27, 2008
Excellent refreshing salad! I love the amount of basil that this calls for. Unlike others, I found the dressing was the perfect amount. I was tempted to make and add more, but once it was refrigerated for a bit, it was just right. I actually used a loaf of french bread that I had bought Friday night, so waiting the day and a half to use it turned out to be the right consistency for this recipe, imo. Not too fresh, not too stale/dry. Thanks for posting!

Zucchini Tomato Toss

Reviewed: Jul. 20, 2008
Really good! This is perfectly refreshing for a scorcher of a day like today. I was a bit leery of the sugar, so added it in small amounts and tasted to be sure it wouldn't be too sweet. I stopped at 1 1/2 T.

Wilderness Place Lodge Cookies

Pretty good, but not my favorite. I like that they have lots of oatmeal in them - that offered just the right amount of "chewiness".
