Yummy in my tummy! Actually, I only had 2 of the 6 that I made as I thought I'd be nice and surprise my mother with the remainder (as well as the toffee caramel squares from this site)for a light "lunch"/snack. She ate all of them in one sitting! LOL... I think I would do the same as others have posted as far as adding some italian style bread crumbs or maybe add some oregano to the garlic butter. Either way, this is a fast, easy, delicious recipe! Thanks for posting!

Apricot Coconut Balls

I'm sorry, I didn't like these at all, which is surprising since I love both apricots and coconut. The condensed milk and confectioner's sugar put it over the top and made them so sickening sweet, I found them inedible. :(

Refried Beans Without the Refry

What I love about this recipe is that you can really make it your own. I followed recipe exact, but once I had the beans mashed (the immersion blender worked great for this...), I found I wanted to 'tinker' with the seasonings a bit more. I started out with reducing the amount of salt based on previous reviews, but wound up adding garlic salt, more cumin, and pinches of italian seasoning and cinnamon. This smelled so wonderful as it cooked all day. Thank you for posting this recipe!

Asian Salmon Wrap

4 1/2 stars, actually. Very nice blend of flavors - this is great when you don't feel like heating up the house with the oven and want something light and fresh. A couple of things I'll do differently next time ~ I discovered that I dislike canned salmon, so I'd use either fresh or pieces of tuna steak or shrimp - I think the tuna and/or shrimp would work nicely here. Secondly, I'd make more of the soy sauce mixture - Loved the taste and felt the wraps could have used more. Thanks for posting the recipe!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Absolutely fabulous! Since my can of beans was only 15 ounces, I opted to omit one egg. I dusted the pan with cocoa powder after it had been greased. Mine was done in less than 35 minutes, so my oven must run hot. I think this tastes best after it's been refrigerated for several hours. Thanks for posting this recipe!

Banana Oat Muffins

Yummylicious! I didn't grind the oats as I like the added texture of leaving them whole. Also didn't add nuts, but I imagine these will be "over the top" when I add them next time. I'll also probably add more cinnamon. Great recipe!

Spicy Baked Sweet Potato Fries

Like so many other reviewers, mine never got crispy. Wish I had read the review earlier that mentioned baking sweet potatoes at a higher temp (500) for 30 min. That probably would have worked better than baking at 400-425, as others suggested. Oh well, still edible!

Buttermilk Chocolate Bread

Fantastic! I love baking with buttermilk - I use the lowfat/reduced fat version with great results. I did not use the chocolate honey butter, but I might try it when I make this again. This baked up beautifully - I did not use pecans but opted to toss in slightly more than 1/4 cup of chocolate chips. Loved it! Thank you for the recipe.

Pecan Sour Cream Pound Cake

Made this to serve at a meeting today and came home with only one piece left if that tells you anything. :) I thought I had pecans but discovered I only had almonds and walnuts, so used them instead and it was fine. End result was a beautiful looking cake - I didn't use the glaze, but opted instead for a basic glaze recipe that uses cream, confectioner's sugar and melted butter.

Caramelized Onion and Gorgonzola Pizza

I've been wanting to try this for months and finally decided to give it a go tonight. Wow! This is such a wonderful combination of flavors - I agree with others... there's no way you'd end up using a whole pound of gorgonzola. That'd ruin the beauty of this recipe. I think I'll add more onions next time (mine weren't very big) and forego adding the sugar as they're sweet enough on their own. I used a whole wheat pita. I also like the idea of adding sauteed mushrooms and toasted walnuts. Thanks for a great recipe!

Lime-Thyme Potato Wedges

Pretty tasty and really quick to throw together. However, I think I'd like it better if the spices were kicked up a notch or two. I agree with Natalie... add the romano cheese later on during baking so as not to have it burn. I'll play around with this one. Thank you!

Oatmeal Whole Wheat Quick Bread

Just what I was hoping for in a healthy quick bread! Flavor is great. I doubled recipe and added wheat germ (3T) and sunflower seeds (1T)and baked for about 52 min.@ 350. Sprinkled the bread with additional oatmeal and sunflower seeds. Doubling the recipe yields a substantial loaf. Excellent fresh out of the oven! Thank you for posting; I'll be making this again.

Almost No Fat Banana Bread

Not bad at all for 'almost no fat' banana bread! I'm glad I waited a couple of days to rate this after I made it. First day, ehh... not very impressive. But, next day, sooo much better! I followed advice of reviewer who added vanilla and almond extract and reduced sugar to 1/2 cup. I also used half all purpose and 1/2 whole wheat flour. I found I had to use a little more than 1/3 cup applesauce to get the batter the right consistency so it wasn't so dry. I did use 3 'nanners' as recommended by others and would do so when I make this again. I sprinkled the top with oatmeal for an extra touch. Thanks for sharing!

Tasty Tuna Burgers

Very tasty! I haven't had fish/seafood in several months and decided to have a go at making a tuna burger. This fit the bill nicely. I had no issues with the mixture being too dry or crumbly. I refrigerated it for approximately 25 minutes. I added more than just a dash of worcestershire sauce, and hot pepper sauce. Omitted the dill as it's not a favorite. I topped with a mix of light sour cream, catsup and mustard. Recipe is very adaptable to one's own liking - I used a tip from another reviewer and cooked these on my George Foreman grill. Very quick, very easy, minimal clean-up. Thanks for posting this recipe!

Roasted Sweet Potatoes & Onions

25 million stars! Wow, I am totally digging this dish. :) Made recipe exactly as written and I guess you can tell what my verdict is, huh? I chose to bake for an additional 10 minutes uncovered, to get the onions nice and brown and yummy. You absolutely must add the toasted almonds once it's done - they add another wonderful dimension! Thanks soooo much for this recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

Love these! For my first batch, I followed the advice of the reviewers who said to refrigerate the dough prior to baking. Those cookies, although soft, chewy, and tasty, came out flat. I let the dough come to room temperature and baked the last batch and I liked the results a lot better. They maintained some of their "plump-ness" and didn't spread nearly as much as the first batch. I used 1 cup semisweet chocolate chips and 1 cup Hershey's dark chocolate raspberry filled baking pieces. Decadent! When I make these again, I will decrease the amount of sugar. Nice chocolatey treat!

Addictive Sweet Potato Burritos

This is worthy of earning a spot in my rotation. Very filling. I totally agree with those who recommended that the onion/garlic saute' include the spices as it gives the opportunity for the flavors to blend vs. adding them afterward. Eyeball the amount of water and decide what works best re the desired consistency. I scaled recipe to 4 and didn't use all of the recommended 2/3 cup of water. The other nice thing about this recipe is it's obvious flexibility - I'm going to experiment with other spices. I added just a touch of curry powder and it was a great addition. I could make a meal on the bean mixture alone!
