Chocolate Fudge Pops

Reviewed: Jun. 29, 2012
Awesome pops! They were fudgy and delicious. I added 1 cup cool whip to the pudding mixture, as some others suggested. There were still some lumps in it but I think it was fine. All the "kids" I gave them to loved the taste and texture, perfect for a hot summer day when you're craving chocolate!

Roasted Brussels Sprouts

Reviewed: Nov. 21, 2012
Wow! These were actually really good. I remember trying brussels sprouts when I was young and absolutely hating them. Now I think I'll be making them pretty often. My Dad picked up a giant stalk of the things on his annual grocery visit, and I wasn't very enthusiastic about them. I decided to try this recipe and I'm very glad I did. The texture was just perfect- not too mushy or too hard, just as a vegetable should be. They were salty and had crispy outer leaves. I added two cloves minced garlic, a slice of bacon crumbled into pieces, and roasted them for exactly a half hour, shaking them pretty often. My Dad and my brother liked them very much and so did I. Thanks for the awesome, healthy dish!

Autumn Muffins

Reviewed: Nov. 21, 2012
These muffins were very nice! They had a good amount of spices and were also moist and sweet. I made them with raisins, cranberries, and honey crisp apples- using what we had on hand. I used applesauce instead of butter, making them a lot healthier, and replaced half the flour with whole wheat. Because of the natural sweetness from the raisins and apples, I think you could decrease the sugar somewhat, too. One batch made about 22 pretty good sized muffins for me, using paper liners. Thanks for the great fall recipe!

Iced Pumpkin Cookies

Reviewed: Nov. 13, 2012
These were really great! They were subtly spiced and and perfectly sweet with cream cheese icing. We shared them with the neighbors and the only few that were left out long enough did get a bit dry. Thanks for the great fall recipe!

Pumpkin Turkey Chili

Reviewed: Nov. 13, 2012
This chili is new, interesting, and quite tasty. I liked the use of pumpkin, and the peppers gave it a nice, sweet touch. I added about a cup of corn, a can of black beans, some cumin, red pepper flakes, used a 15 oz. can pumpkin, and added extra chili powder. I also use one can of crushed tomatoes and 1/2 can of stewed tomatoes, and orange peppers instead of the green. It was really great garnished with cilantro leaves. Thanks for the different, fall recipe that all of my family enjoyed!

Quinoa and Black Beans

Reviewed: Nov. 1, 2012
This was surprisingly good! I've tried Quinoa once before and didn't really like the way it tasted, but I prepared this way it tasted awesome. I made a half recipe with 3/4 of a can of beans and it was perfect. Me and my dad finished it off in one evening; it was awesome with some sour cream. Letting the cilantro sit with the other ingredients for a little bit longer did take some of the bite out, leaving the flavor. Thanks for the awesome, healthy recipe!

Pumpkin Chocolate Chip Cookies III

Reviewed: Oct. 30, 2012
I would give these cookies 35 stars if I could! They are absolutely the best pumpkin cookies I've ever tasted. Those who are hesitant to try them, do not fear! The subtle spice and pumpkin flavor mixes in perfectly with the chocolate, and they have a soft, cake-like texture. I did a 1.5 batch and it made about 42 pretty big cookies. When baked 10 minutes on a greased cookie sheet, they had lightly browned bottoms. When baked on parchment paper, they were finished after about 12 minutes, minus the crunchier bottom- but I do think they rose a bit less too. They ended up perfectly orange colored, so I don't know what happened to some other reviewers. Everyone loved them, thanks so much for the awesome cookies!!

Grilled Asparagus

Reviewed: Oct. 30, 2012
This was a great way to make asparagus. The tricky part is cooking it just right. I tossed the asparagus spears in the olive oil with some pepper, salt, and garlic powder, and cooked over the stove top for about 15 minutes. Next time I'll add more garlic and maybe add some lemon juice on top. Great recipe!

Fantastic Black Bean Chili

Reviewed: Oct. 23, 2012
Mmmmm! This is a rich, flavorful, and hearty chili. I really liked the spices- I added a little cumin to the meat as some others suggested and it was just great. I used only two cans of beans and added some stewed tomatoes, which I would definitely recommend. Topped with sour cream and shredded cheese- thanks for the delicious, healthy dish that everyone loves!

Best Chocolate Chip Cookies

Reviewed: Oct. 20, 2012
Mmmmm.. these are nice, classic chocolate chip cookies. The texture really is perfect! I omitted the walnuts. You just have to be sure to not over bake them- right when the edges are browned a bit then they're done. I also think that the type of pan you use and how high the rack you put them. A dark pizza pan on the top rack gave flatter, browner cookies, while a nonstick cookie sheet made better ones. Thanks for the amazing cookies!

Roasted Pumpkin Seeds

Reviewed: Oct. 14, 2012
Yum! This is a good, basic pumpkin seed recipe. I made a small batch from a pie pumpkin, about 3/4 cups, and they were done in about 25 minutes. I also left them in the oven after turning it off to let them dry a bit more. Pumpkin seeds are our favorite after making pumpkin soup or jack-o-lanterns!

Chocolate Wafer Crust

Reviewed: Oct. 14, 2012
This makes an awesome crust and is very versatile depending on what type of cookie you use. I used homemade chocolate chunk cookie crumbs; ground up in my food processor, and six tablespoons was WAY too much butter. I think it was because of the moisture already in the cookies. On my second batch, I used about 2 1/2 tablespoons and it was perfect! The crust didn't crumble too much and tasted great. It worked in the place of an oreo crust for my pudding pie. Thanks for the recipe!

Crab Legs with Garlic Butter Sauce

Reviewed: Oct. 13, 2012
Mmmm! This is my favorite way to prepare crab legs. The buttery, garlic flavor accents the flavor of the crab very well. It was also easy to make; using pre-cooked crab legs was pretty convenient. Great recipe!

Lemon Cake

Reviewed: Oct. 13, 2012
This cake is so awesome! Everyone loved it, and it was super easy to make. I also appreciated how it was on the light side, too. I used lemon cake mix, and I think it was perfectly lemony. I made it in a 9x13 pan and it came out fine. I used extra frosting (it was great frosting, too!) to decorate with raspberries. It was more on the spongy side because of the pudding, but that made it unique from the light tea- style cake that I was expecting. I think it has something to do with how long you beat it for. Thanks, I'm keeping this recipe!

Apple Toast

This was a nice snack and a creative idea. I loved the crunchy toast and chewy apples. Make sure to sprinkle the cinnamon evenly. With an electric oven that has two broil settings, level High is the way to go. Awesome recipe!

Delicious Ham and Potato Soup

Reviewed: Sep. 20, 2012
Mmmm... This soup is so nice! I really liked the ham in it. I also added a bit of chopped carrot, used more potatoes, and chicken broth instead of the water and bouillon. The milk mixture didn't thicken up in the pan, maybe I didn't add enough flour or added the milk too fast. It did thicken up in the soup pot though, and gave it a nice texture. Thanks for the awesome soup!

Peanut Butter Cup Cookies

Reviewed: Aug. 22, 2012
AWESOME cookies! Peanut butter and chocolate never tasted so good together! It's helpful if you have a large mini muffin pan with more than 12 dents. It helps to freeze the cups before and after you unwrap them. Thanks for the great recipe!

Awesome shrimp!! It was easier to just put the parsely and garlic cloves in a food processor to chop them up finely. Served with potato pasta shells. Great flavor, great recipe!
