Four Provinces Brown Soda Bread

Reviewed: Mar. 17, 2013
This bread was amazing! It had a perfect sweetness and texture that I'm sure is characteristic of traditional soda bread. The crust reminded me of a pretzel. I made it with 1 tsp baking powder and 1 tsp. cream of tarter, ommitted the wheat bran and raisens because I was out, and made my own buttermilk with lowfat milk and vinegar. Everyone loved it, this will be a new St. Patrick's Day tradition in our family!

Whole Wheat Blueberry Muffins

Reviewed: Feb. 19, 2013
These muffins were great! I used white whole wheat flour, tsp. baking powder and one tsp. baking soda, and subbed some olive oil and some vanilla yogurt for the oil. The muffins had lots of blueberries, and, when coated in flour before being added, didn't sink to the bottom. Great recipe!

Blueberry Lemon Breakfast Quinoa

Reviewed: Feb. 8, 2013
This was really good! It was fresh yet rich- tasting, and the sweetness from the blueberries and syrup was perfect! Topped with toasted, slivered almonds instead of flax seed. A great new way to have quinoa!

Sweet and Spicy Green Beans

Reviewed: Feb. 1, 2013
These green beans are awesome! They have a great flavor which resembles that of Asian cuisine. I subbed 1/2 tsp. garlic powder and 1/2 tsp. chili powder for the sauce and it worked great. Thank you for the fresh, great recipe!

Simple Whole Wheat Bread

Reviewed: Jan. 19, 2013
This bread was awesome, and I'm sure it would be even better prepared correctly. I was in a rush when making this bread and a misunderstanding caused it to miss the rising time and be cooked for only 12 minutes. I re-baked it later on for about 20 more minutes. The ending texture was kind of dense, which would be expected of un-risen bread, but still tasted great toasted. I'll try this again soon with white whole-wheat flour and the full rising time!

Cranberry Orange Loaf

Reviewed: Jan. 8, 2013
This bread was wonderful! The tart cranberries, zesty orange, and sweetness of the bread really balanced and made a great loaf. One batch made three pretty full mini loaves that required a baking sheet for the drips but turned out beautifully. I halved the cranberries to reduce their tartness, and tried making the glaze that others suggested with 1c. powdered sugar and some orange juice and vanilla, but ended up having to add several tablespoons milk because it was way too dry! I don't know how other people must have made it but it did add a nice touch to my loaves when fixed. The hardest part was waiting until the next day to eat them!

Blackened Tilapia with Secret Hobo Spices

Reviewed: Jan. 8, 2013
This was really good. I had never tried tilapia before and the spices were just perfect. Even my fish- hating sister ate half of a fillet! I subbed black pepper for the white, and I didn't find the overall taste too spicy or salty. The only thing I noticed was that there weren't any "juices" that formed during the cooking process, but it still tasted great on the bread. Tell that hobo thanks for the great recipe!

White Chocolate Raspberry Cheesecake

Reviewed: Dec. 26, 2012
This cheesecake is fantastic! Rich, sweet, creamy, and attractive. I made it for my family for Christmas dinner. Everyone loved it, and I got special comments on the crust, for which I used oreos- about 1 3/4 cups ground in my food processor, 1 T sugar, and a little less than 1/4 c butter. I might reduce the butter more next time, because the crust ended up a little extra moist. The middle did crack, even though I turned off the oven and left it in for a bit to prevent it, but the swirled pattern on top made it unnoticeable. I liked the raspberry sauce and thought it was worth the work. Thanks for the amazing, delicious recipe!

White Chocolate Gorp

Reviewed: Dec. 24, 2012
This was delicious! I made a half batch for my sister's class Christmas party and they ate the whole bag. She also mentioned receiving a lot of raves from her classmates. I used frosted cheerios and omitted the nuts, and used red candy coating I happened to have with green sprinkles. I also might use less candy coating next time like some suggested. Thanks for the great recipe!

Hot Buttered Yum Chex® Mix

Reviewed: Dec. 24, 2012
This was absolutely delicious! It was sweet yet also salty, chewy but also crunchy. I added 2 cups pretzels, subbed vanilla extract instead of rum, and doubled the batch to bring in for my class Christmas party. It sat untouched next to the puppy chow. So later I brought it to Spanish club to share. It didn't exactly fit next to the chips and salsa but they LOVED it. The whole bag was gone by the end of an hour. Thanks for the awesome chex mix recipe!

Peppermint Cookies

Reviewed: Dec. 11, 2012
These cookies were great! The peppermint looked very festive and cute on top. The only thing that bugged me was that the finished product sort of reminded me of packaged drop cookies that you can buy at the store. They're awesome when you know you made them by yourself, though. Great recipe to give as a gift!
