Taco Seasoning I

Awesome! Used ground cayenne pepper and added to 1 lb shrimp. Might increase the heat next time. Why did we ever buy packets, anyway?

One Bowl Chocolate Cake III

Awesome cake! Sooo easy and fast, but so moist and everyone loved it. Halved it for a 9 inch circle cake. I used mostly dutch process cocoa and 2tbsp hershey's cocoa. Also used half half-and-half and half 2% milk for the milk :)

Ultimate Double Chocolate Cookies

Wonderful! Very chocolaty and rich. Accidentally only used 8 tbsps butter (half butter and half coconut oil) so the cookies didn't spread out much at all. Looked kinda like a truffle.

French Silk Chocolate Pie I

Be VERY careful if you want to try almond extract. I read a review to try it and added a tiny bit. Three out of five people tried it for pi day didn't like it and thought it was too strong. Also use real vanilla if you can, it makes much of the flavor. Other than that, a fantastic pie! I beat it well for the full time and it was silky and fluffy. It filled a smallish homemade oreo crust well. topped with chocolate shavings, served with whipped cream on the side but I think it's great without. I also used 4 tbsp. dutch process cocoa powder like one reviewer said, mixed well and it turned out great (except for the fact that I spilled cocoa all over the table, chair and floor when trying to move my mixing to appease movie watchers nearby). Very tasty, will try again.

Hummus III

Great! Good lemon and garlic flavor. I'd like to try other flavors, as well. Used the advice of reviewer SonjaL and blended it in my mini food processer. One can of chickpeas is about 1.5 cups. I stuck with just paprika and took this to a class party. We liked it and I enjoyed that it is healthy and tasty.

Cream Puffs

Very tasty! They devoured them at international fiesta today. I don't know if I'm just lucky or I made my puffs a bit smaller but I didn't poke holes and they didn't sink. I used french vanilla and they were sublime. Will try drizzling with chocolate next time.

Easy Mini Quiches

Great little bites. My Dad couldn't stop eating them! I used some fresh thyme in place of parsley, cheddar cheese with a little grated Parmesan, and subbed about 2/3 cup flour with some baking powder for the pancake mix. They baked up nicely but were done before they got brown on the top- I'm careful to avoid overcooked eggs. Good recipe to have on hand for my mom's MOPS meetings.

Chocolate Crinkles II

Very good! Went fast at our Christmas french club meeting, and at my house. Some people called them "brownie cookies". Relatively easy, used silicone baking mats and baked at the top of the oven as one reviewer suggested and it worked like a charm. I also used dutch process for about 2/3 of the cocoa. Great cookie to have on hand for Christmas!

Very tasty! No one suspected the whole wheat, and I reduced some sugar and used half applesauce half oil. omitted raisins and topped some with walnuts, some with turbinado sugar.

Delicious! My mom admitted that the texture was better than Jiffy box mix by a lot. I used vanilla yogurt and with the written amont of sugar it would be perfect.

Chocolate Oatmeal Porridge

Very tasty and chocolaty. I used a mixture of old fashioned oats, quick-cooking oats, and oat bran, and used half 2 percent and half almond milk. I Also reduced the sugar to about about 3 tablespoons and it was very chocolaty, tasty, and great with a bit of yogurt. It had the perfect consistency after about 5 minutes. Dad and I liked it, my sister needed more sweetener. Great oatmeal!

Grilled Cod

Good fish, but mine turned out rubbery. I don't know if it was my changes or that I used a gas grill. I subbed old bay instead of cajun seasoning and lime juice instead of lemon. The flavor was good, though. My process for a nonstick grill worked well, though- heat up and scrape the rack, then wipe the grate with an oil- dipped paper towel several times. Maybe next time I'll be sure I'm not overcooking the fish.
