Lemon Poppy Seed Bread

WOW this bread is good! We made a half recipe and baked a dozen muffins for about 16 minutes. Also used buttermilk and about 1/4 c. or lemon juice. Drizzled on the icing recipe from one reviewer- 1/4 c. orange juice, lemon extract and 5 tbsp. powdered sugar. They were moist, dense, sweet, and cake- like. Thanks for the great recipe!

Mexican Cookie Rings

My dad absolutely loved these. They are a cross between a butter cookie and a sugar cookie. They are a good, dependable cookie. They are basic enough that pretty much everyone will like them. Made them for Spanish club and everyone took one with a few leftovers that my dad finished off easily enough ;) The only problem I had was forming them into rings- it was easy to make them into balls, but you have to squish them around once they're in balls to get them a bit more elastic before pushing your thumb in and forming the ring around it.

Healthy Coconut Oatmeal

This oatmeal tasted great! And this coming from someone who could never finish their bowl of oats until Quaker's oat medley cups. I loved the combination. I used unsweetened vanilla almond milk (be sure to get a big enough pan because it boils over quickly!) and added pecans and slivered almonds on top because of prefrences. It had great texture and was sweet enough to add plain, nonfat greek yogurt to, and was super fast to make. Thanks for the recipe!

These waffles were great, and no one could tell I used white whole wheat flour! Added more vanilla and used vanilla yogurt instead of the oil. Also works with frozen blueberries and cinnamon added.

Award Winning Soft Chocolate Chip Cookies

These were awesome! They turned out the most perfect chocolate chip cookies. Moist, not too sweet, not too dense, great appearance. The hardest part was getting my family to save a few for the party!

These were good. Sifting the dry ingredients might have helped a bit but I ended up with pretty crumbly dough. still was able to form into balls but not roll out. Good, delicate recipe.

Four Provinces Brown Soda Bread

This bread was amazing! It had a perfect sweetness and texture that I'm sure is characteristic of traditional soda bread. The crust reminded me of a pretzel. I made it with 1 tsp baking powder and 1 tsp. cream of tarter, ommitted the wheat bran and raisens because I was out, and made my own buttermilk with lowfat milk and vinegar. Everyone loved it, this will be a new St. Patrick's Day tradition in our family!

Whole Wheat Blueberry Muffins

These muffins were great! I used white whole wheat flour, tsp. baking powder and one tsp. baking soda, and subbed some olive oil and some vanilla yogurt for the oil. The muffins had lots of blueberries, and, when coated in flour before being added, didn't sink to the bottom. Great recipe!

Blueberry Lemon Breakfast Quinoa

This was really good! It was fresh yet rich- tasting, and the sweetness from the blueberries and syrup was perfect! Topped with toasted, slivered almonds instead of flax seed. A great new way to have quinoa!

Sweet and Spicy Green Beans

These green beans are awesome! They have a great flavor which resembles that of Asian cuisine. I subbed 1/2 tsp. garlic powder and 1/2 tsp. chili powder for the sauce and it worked great. Thank you for the fresh, great recipe!
