Best Brownies

I liked that I had the ingredients on hand to make these brownies. They were moist and chocolaty, but a little too fudge-like for my tastes. But if you like fudge brownies, you'll enjoy these.

Kentucky Grilled Chicken

I've had tastier marinades. It turned out kind of bland, and the chicken was not as tender as I was hoping. It seemed like there was a missing ingredient that would have amp'd up the flavor.

Onion Quiche

Never made a quiche before, but this one turned out great. It's so quick and easy that I'm sure I'll be making it again soon. You'll want to add some salt, pepper or other seasoning to the egg mixture to bring out the flavor. I made a few additions and substitutions based on what I had on hand. This recipe lends itself to that. Instead of heavy cream, I used some canned evaporated milk, and added a fourth egg as others have suggested. To season, I mixed in a tablespoon of onion soup mix and some black pepper in with the eggs. I used a blend of cheddar and monterey jack cheese since I didn't have any swiss. The texture was spot on, and it received a thumbs up from my husband.

Sugar Cookie Frosting

This turned out exactly as I had hoped. The icing tastes delicious, and it dries just enough to where you can stack the cookies without them sticking together. I used butter flavored Crisco, and was happy with the result. I can finally make powdered sugar icing!

Portobello Mushroom Stroganoff

Cafeteria Carrot Souffle

Great dish! This turned out exactly as I had hoped -- both flavor and texture wise. I followed the recipe as written, and it came out of the oven virtually perfect. I cooked it the day before Thanksgiving and warmed it up from refrigerated the next day.

Yellow Squash Casserole

Delicious. I cooked the squash using a microwave steam bag and sauteed the onions in some olive oil. For the cheese, I used a mixture of grated cheddar and mozzarella. It was a hit with my husband.

Vegetarian Refried Beans

This tasted amazing. I used a batch of pinto beans we had cooked the day before, and blended the other ingredients in the Vitamix to a paste. You could probably use a blender. Then I added the mixture to the beans and let the whole thing cook for about 45 mins or so. Mashed the beans, seasoned with salt and then was ready to serve. Delicious!

Pollo Fajitas

The fajitas had terrific flavor and were easy to make. I made the recipe as is, but left out the bell pepper. I marinated the chicken for about a half hour, and it turned out great. When I cooked the chicken, I added a little of the marinating liquid to reduce in the skillet. We served it with warm corn tortillas and bottled green tomatillo salsa. Delicious!

Chicken with Couscous

This dish turned out delicious. I don't eat meat, so I substituted vegetable broth for the chicken broth and Trader Joe's Soy Nuggets for the chicken. We ate a good bit of it as our main dish as dinner, and I had enough to take to work the next day. It is quite spicy, but the flavor is savory and balanced.

Quinoa Pilaf

This dish was just okay. I rinsed the quinoa and followed the recipe as printed, but it turned out bland. I seasoned it with salt and pepper before serving, but I couldn't seem to bring out a good flavor. I won't be making this again.

Chicken Noodle Soup

I didn't have any broth in the cupboard and was happy to find this recipe. A word of warning - the bullion cubes I used had MSG, which ended up giving my partner a headache. I don't mind a bit of MSG in a dish, but this soup ended up having too much.

Portobello Mushroom Burgers

This was just OK. I'm not sure if I made it correctly since the mushrooms were saturated with the taste of balsamic vinegar. And, they were rather soggy after they came off the BBQ grill, making it nearly impossible to eat them on a bun. If I try this again, I'll use less vinegar and cook the portobellos underneath the broiler.

Sour Cream Chicken Paprika

I would give this recipe six stars if I could. The paprika and sour cream in the rich, creamy sauce wake up boneless skinless chicken breasts. I was pleasantly surprised at how delicious this easy to prepare dish was. To tenderize the chicken before cooking, I cut the breasts in half lengthwise and pounded them a bit between two sheets of plastic wrap. And because I wanted smaller pieces, I cut the pounded breast pieces in two. I seasoned the breast pieces with a little seasoned salt before browning them in the skillet. I followed the other directions to the letter, except I mixed in a tbsp of cornstarch instead of flour in to the sour cream. This dish exceed my expectations. I served the chicken and sauce with mashed potatoes, but this would also be good over egg noodles.

Steamed Zucchini

Very good. The mashed steamed garlic is the secret ingredient of this dish. I used a dash of Italian season on the zucchini before I placed it in the steamer. And, I also sprinkled a little bit of salt and pepper on the finished dish.

Strawberry Pie VI

This pie tasted wonderful, and was a hit at my house. This is a keeper for the recipe box. Instead of making it with sliced strawberries, I cut the berries into cubes and mixed them in with the filling. The effect was a bit of fresh strawberry in every bite.

California Cole Slaw
