Baked Acorn Squash with Apricot Preserves

Great idea. Glad to have another way to cook squash. I used sugar free preserves as we don't eat sugar and added a little brown sugar Splenda. I was worried about the topping being a little bland and sweet, so I blended a touch of cayenne pepper and salt with the preserves. A hit at our table. Thanks for the idea.

Grilled Rib Eye Steaks

I registered for this site to comment on this, and one other recipe. This is one of the best marinades I've had. I did make a few changes for what I had on hand, and our dietary choices. I used finely chopped onions and parsley (for color) as I didn't have green onions. I used Splenda Brown sugar as we don't use regular sugar. I marinated for 6 hours due to time, and the steak was still tender and moist. I've since used this recipe for a chicken stir fry and plan on using it for salmon. A new favorite in our house.

Herb Rubbed Sirloin Tip Roast

I finally registered for the site to comment on this, and one other recipe. I made the recipe exactly like your original and it turned out awesome. I used kosher salt and didn't think it was too salty. My son is a steak fan and not often happy when I do other cuts of meat, but he loved this one. The cut of meat wasn't my favorite, but it was what we had from our steer. The rub kept the roast very moist, I just didn't like the gristle running through the cut. I'm looking forward to trying this on other cuts of meat, and maybe a pork roast.
