Meatless Lasagna

great recipe! I tend to shred my carrots and zuch, though. easier to hid them from the kids! no mushrooms here but did add some chopped artichokes. Oh and I used thyme, and oregano on top of the other spices called for, then added some parm and parsley to the ricotta mixture. Yum! Thanks!!

Mom's Casserole

good base recipe. seems bland as written (for my family at least). I don't measure so I just used whatever I had and adjusted it. I added lots of other spices, ommitted green onions, subbed plain yogurt for sour cream since that's all I had. Mixed that in with noodles, topped with meat sauce. I didn't have any cheddar either, so used parm. turned out great!

good starting recipe! added some extra cumin, garlic,sauted onion jalapeno, corn, cilantro and lime. I didn't puree both cans of beans, just to have some texture. very nice! thanks!

After-Thanksgiving Turkey Soup

Very nice! I had a lot of gravy leftover- so I used it and some of the leftover mashed potatoes in place of the flour and stock. Then I omitted the bouillon and salt. Turned out yummy!!!

Lentil and Sausage Soup

This was amazing! loved it. I only had half a bag of lentils, but I think that was more than enough. I only added about half the chicken broth b/c of this. added more of the veggies, omitted the bay leaf and used dried parsley and a fresh tomato on top of the canned. Thanks!!!

Cranberry Pumpkin Muffins

wonderfu fall treat!! I also did 1c white, 1c ww, 1/4c wheat germ, and added 1/4c oat bran since I used a full can of pumpkin. I cut my berries in half and used 1 &1/4c. I also used 1/4c applesauce, and 1/4c oil + 2tbl. aprox 1c sugar as well. I'm sure they are good as is, but mine turned out well. I did heat the oven to 400 but turned it down for most of the baking to 375 b/c my oven seems to burn everything!! I used paper liners as well.

Sloppy Joes II

Awesome! I also subbed some of the ketchup with some Aurthor Bryant's BBQ sauce. (it's a vinegar base) I also added a lil sneaky chef puree of spinach and blueberries (sounds gross but you don't even taste it, I swear!!) to up the nutritional value. Both my 2 and 4 yr old girls inhaled it!!! This will be added to our rotation for sure!!! TY!!

Di's Delicious Deluxe Deviled Eggs

Good! But I changed it for sake of using what I had avail. Used Celery Salt, an onion powder. No salt or pepper. I liked the hot pepper sauce and I added garlic powder, cayenne, a dash of pickle relish, a squirt of spicy brown mustard, and mustard powder. can't wait to taste after they chill, but so far so good! Thanks!

Layered Chicken and Black Bean Enchilada Casserole

So much easier than traditional method of making!! took tips from others, did chicken with garlic and lots of cumin. didn't have corriander or cilantro or sourcream. mixed in some chili powder,corn and plain greek yogurt. layered with high fiber whole wheat tortillas. (probably better w/corn though) topped with black olives. my 2yo had seconds, hubby raved! Will be using this again. Thinking of using shrimp next time, ?????

Stuffed Peppers

simple and easy. For a mexi twist I omit italian seasoning and add cumin, paprika, oregano, and chili powder to the other seasonings. a can of black beans(rinsed and drained), corn, tomatoes and brown rice with some cheese on top is yummy. Parents- I pureed steamed broccoli, peas and spinach and mixed that in jic the kiddos don't want to eat the pepper part. Can't taste it at all!

MMMMMMM...... I'm not Indian and don't eat a lot of indian food so I can't say it's athentic or not, but I made this and loved it~~ toned down a seperate pan for the kids, my 1yr old tore it up!

fantastic!! used my crockpot for the meat and used flour tortillas and red sauce. Everyone loved it! Even my picky stepdad!! Thanks! This will be replacing all my other enchilada recipes!
