Mexican Bean Salad
I made this salad last night and left it sit overnight in the fridge- it turned out great! I've seen recipes similar to this in other places that say to serve it like a "salsa" with tortilla chips. Tried it by itself, as a salad, and on tortilla chips and it's great both ways. The changes I made were: left out the corn (my hubby doesn't care for it), used dried beans (soaked o/n, then boiled and cooled before putting in salad), added 3 cloves garlic (we love garlic), and 1/4 teaspoon oregano to round out the flavor palate. I left all other ingredients and amounts the same. This does make a huge batch, but I didn't mind. There is a lot of dressing, but that gives plenty for the beans to soak up all the great flavors overnight. Thanks for the great recipe:-)
