Fluffy Pancakes
I've been using this recipe for a couple of years now. I follow the recipe exactly, except I make a triple batch every time. These make the best homemade pancakes. I use a 1/3 c. measuring cup to scoop the batter onto a hot griddle and I get 6 pancakes out of one batch (17-18 out of the triple batch I make). Because this recipe relies on the reaction of the baking soda and vinegar for its fluffiness, don't let the batter sit...your griddle needs to be ready to go, so that you can start cooking them as soon as the batter is mixed together. This does make a thick batter, but the pancakes cook up nice and fluffy. Thanks for sharing the recipe!!

Mexican Bean Salad
I made this salad last night and left it sit overnight in the fridge- it turned out great! I've seen recipes similar to this in other places that say to serve it like a "salsa" with tortilla chips. Tried it by itself, as a salad, and on tortilla chips and it's great both ways. The changes I made were: left out the corn (my hubby doesn't care for it), used dried beans (soaked o/n, then boiled and cooled before putting in salad), added 3 cloves garlic (we love garlic), and 1/4 teaspoon oregano to round out the flavor palate. I left all other ingredients and amounts the same. This does make a huge batch, but I didn't mind. There is a lot of dressing, but that gives plenty for the beans to soak up all the great flavors overnight. Thanks for the great recipe:-)
