Spicy Black Bean Salad

I thought this recipe was okay, but like many reviewers, I didn't like so much oil. What I did was to substitute the oil with a half cup of Bolthouse Ranch dressing (only 45 calories for 2 T. Yogurt based, found in the refrigerated case at stores). I used 1 can of black beans plus the can of corn and 1 cup of chopped red onions, 1/4 cup chopped fresh cilantro, coarse ground pepper, and 1/4 cup of grated Parmesan cheese. Sometimes I add a cup of jicama, chopped, for crunch and 1 cup of quartered grape or cherry tomatoes, when in season. A squeeze of fresh lime juice and refrigerate. I do not add the garlic and salsa.

Strawberry Bread

Made this bread today and we loved it. One loaf is already gone. I used 4 cups of sliced strawberries and used 2 tsp. of cinnamon, as my husband isn't a fan of it. Those were the only changes I made. If you use dark pans you need to reduce the oven temp to 325 degrees so it doesn't dry out. Will definitely make it again and again!

Sweet, Sticky and Spicy Chicken

This recipe is very tasty with a nice spiciness to it. I didn't have a difficult time getting the sauce to thicken, but coating the chicken with flour, as many have suggested is a great idea. Next time I make this, I will definitely add a variety of vegetables, as I like crunchy with the spicy and sweetness of the chicken. Add some store bought spring rolls or egg rolls, fried rice or regular white rice and you'll have a yummy Chinese dinner!

Baked Penne with Italian Sausage

I made this recipe tonight and was totally disappointed. I had to doctor it up in order to make it pallitable. Those who used a jar of pasta sauce made a good decision. I won't make it again!

Grilled Lemon Chicken

I made this for dinner tonight and my husband and son loved it. I didn't change a thing and served it with roasted baby potatoes, green beans and a green salad with tomatoes. Yummy and healthy!
