About this Cook
I graduated from the Pacific Institute of Culinary Arts in September 2011 with a diploma in Baking and Pastry. I am now working in an adorable cupcake shop in BC and love what I do!
My favorite things to cook
Anything and everything in the pastry world. From parisian macarons to croissants, my nanny's recipe for vegan chocolate cake to lemon meringue tarts. I don't discriminate when it comes to baking :)
My cooking tragedies
Adding 1/2 cup of salt (accidentally, instead of 1/2 tsp) to my chocolate cake. I was 8, give me a break! Definitely didn't make that mistake again!

Spring Biscotti
I made the Biscotti Toscani recipe a few days ago and then this one tonight, and I most definitely prefer the other recipe. While this one is alright, I found the logs difficult to slice after the first bake.. Maybe it was because of all the chunks of dried fruit and nuts.. Who knows. I like the idea of the flavours in this recipe (I used lemon in place of orange, and cherries in place of the cranberries), but will definitely go back to the Biscotti Toscani recipe as opposed to this one, and use it as the base, varying the fruits and nuts. Also, I didn't like that you had to chill the dough for a half hour.

Biscotti Toscani
This is a great recipe, made delicious biscotti! I didn't have any nutmeg on hand so I used ground cardamom instead, it turned out nicely, but next time I will make sure to use the nutmeg, like the recipe calls for. Personally, I'm not a huge fan of biscotti unless I'm dunking it, and having this alongside a mug of steaming hot chai tea is the perfect afternoon snack!
