Grandma Gladys's Zucchini Soup

Flavorful, hearty soup. I used about 1/2 the amount crushed tomato and chicken broth to keep the soup thick.

Coconut Date Balls

I really like these, and I'm not a big cookie fan. I found it was easier to roll by adding coconut to the mixture--then it would get formed and stay together. I also found that it makes a difference if you buy brand name shredded coconut vs store brand. The store brand coconut is dryer, making it harder to roll and stay together. Edit: I froze these. When I want a few, I pop in the micro for couple of seconds, and they are still wonderful

Easy Sweet Potato Casserole

I used one cup brown sugar and 1/2 cup sugar because I love brown sugar. Also used regular marshmallows. Came out great!

Spicy Turkey Sweet Potato Gumbo

Very nice flavors. Used chicken, sweet potato, celery, kielbasa, and zucchini. Cooked the chicken in olive oil. Then added onion and celery. Then added the sweet potato, kielbasa and zucchini for the last 20 min or so. All in the same pot.

Ultimate Breakfast Strata

Great recipe! Was looking for a hearty egg recipe that would "satisfy" my husband after a long day. I used 6 potatoes to beef it up and 8 eggs. 1/2 cup sour cream and about 1/2 cup chedder cheese on the top. Took about 1 hour 15 minutes (I cooked the sausage links, peppers, and onions in the same pan, while boiling the potatoes to save time. Put everything but the cheese in a 11x7 pan. Cooked at 400 for 15 min, then added shredded cheese for the final 15 minutes.

Cheesy Sausage Zucchini Casserole

Nice and hearty for my husband and son. I used hamburger instead of sausage and omitted the mushrooms. I took the others' suggestions and added cheddar. I also only baked it for 1/2 hour, just enough to heat through because I prefer my zucchini slightly firm. I also used twice the rice.

Marinated Potato Salad with Anchovy Vinaigrette

I ommitted the anchovies and added artichokes and Kalamata olives. I also substituted red wine vinegar instead of the white wine vinegar.
