Cheesy Butternut Squash Pasta Sauce
I used one acorn squash, baked it in the oven then let it cool slightly and scooped it into a bowl. I then mashed it up and added it to the mixture already cooking. I made the choice to add smoked chopped chipolte for heat then added 1T of brown sugar. At the end I puréed it and it turned out awesome. Had a great sweet heat that I will be making lots this fall. Could easily add more broth and make it into a great soup too.

Pumpkin Chipotle Pasta Sauce
This is a little strange of a combination, I'll admit, but it works. Very well!!! I have made this many times and it has a great "heat" followed by a sweetness to it. I used canned chipotles and take the seeds out so it's not too hot. I didn't have the sage this last time and it still came out great. This is a recipe that you should really try at least once with pasta. It could always be added to a lasagna type dish as well and I think next time I'm going to add petite peas.

Quinoa Black Bean Burgers
Very good and very easy. Like some others I used a little more quinoa (1/2 cup dry) and I didn't use peppers just cause I didn't have them. I made a quick batch before I had to go to work and they went together super fast and easy and tasted great. My 8 year old daughter loved them as did the wife. Will make again for sure. If you like quinoa you'll love these.
