Heavenly Halibut

Made this for my family last night and they loved it (the kids are 12, 11 and 9). I had no intention of changing the recipe but realized once it was too late that I was out of green onion and unbelievably, lemon. So I just used a little minced cooking onion and a splash of lime. It was excellent and easy. I look forward to making it again with the correct ingredients. Thanks for giving us another excuse to eat fish!

Lentil Soup

We loved this recipe (family of 5). I used balsamic vinegar instead (maybe s 1/8 C) and extra salt and pepper. Skipped the spinach only because I didn't have any. Added 2 diced potatoes like another reader suggested (along with carrots etc). Used 5-6 cloves of garlic just because I like it. I had the time so after doing the carrots, onion etc I tossed it in the crockpot with all the other ingredients. When I came home the house smelled amazing! Also - I pureed the whole batch and served with plain greek yogurt. Yum! A keeper for our family!

Blue Cheese, Walnut, and Pear Pizza

Ok, rating again because this time I made it with fresh rosemary, cut it into small pieces and served as an appetizer at a friend's birthday party - rave reviews. PLUS - I used the leftover sauce this way: I sauteed some chicken thighs in olive oil (salt and peppered it first). I had 1/2 bunch of swiss chard to use up so I chopped it finely and threw that in while cooking the chicken. When chicken was browned on both sides, I added in the leftover sauce that I didn't use on the pizza. I had two ripe pears to use up so I peeled those, chopped and threw them in too. Cooked until chicken was almost falling apart, maybe 40 mins. Served it over jasmine rice. YUM!

Greek Potato Stew

We loved this. It's very similiar to the potatoes you get at a Greek Restaurant and this is what I was looking for. I made it exactly as written but at the end added the juice of one lemon just to give it a bit of zing. Excellent, thank you!

Sausage, Peppers, Onions, and Potato Bake

Our family loved this recipe - I only made changes because I didn't have exact ingredients on hand - I used small baby potatoes, halved and unpeeled. I only had red and yellow peppers and instead of Italian seasoning I used some dried oregano and basil. I used less onion as well. I had leftover grilled sausages so I just cut them up and tossed in with the rest before I put the whole thing in the oven. I served this with spaghetti squash which I tossed with sautéed garlic, parmesan cheese, fresh basil and s&p. Delicious!
