Red Potato Soup

Yes, less liquid, and added a little flour for thickening. As for floating butter....well, Grandma's potato soup always had floating butter and I think it's kinda pretty! You can stir in the butter with your spoon when you eat it. Hardy cold weather soup. Only four stars because of the boo-boos on liquid amounts, but it's a keeper. Thanks!

Blue Cheese, Spinach Meat Loaf Muffins

Only four stars because I don't like blue/bleu cheese (I prefer mozzarella or cheddar). But I love the muffin pan idea. I've been doing mini meatloafs for a while now, but the muffin pans make it much tidier and more uniform.

Virgina's Tuna Salad

My two minute version. For two of us, I just use one 5-oz can of tuna, still use one egg, adjust the other ingredients. I microwave the egg in a covered bowl at 50% power for one minute, then crush with a fork and mix with other ingedients. Literally ready in two minutes, really!

Classic Goulash

Only 4 stars, because it has a bit too much tomato flavor for me. I want to try this same spice combination for my next beef stew.

Scrambled Potatoes

I did not care for this recipe. Couldn't taste anything but the overwheming amount of bacon, and the excessive amount of cheese makes it a gooey mess.

Chef John's White Sauce

This is a BASIC sauce. Add whatever spices will complement whatever you're going to use it on. Important: you want to cook the butter/four mix at a temp that will cook the flour without burning the butter. Usually when I get lumps, it's because I didn't cook the flour long enough. I like to make this with whole wheat flour, if you don't mind a brown "white" sauce with speckles. :)
