Penne Pasta with Cannellini Beans and Escarole

Yummy! Even the meat eaters were pleased. I was a little dissappointed with the lack of protein (only 11 gs per person with a whopping 50 gs of carbs), perhaps more beans and less pasta are in order. I used mustard greens instead because I couldn't find escarole at the store and online said it would be a good substitute (it was). I also used whole wheat penne.

Easy Pavlova

Marrakesh Vegetable Curry

AMAZING. I doubled the spiced except for the cayenne. I would say this makes more like 10 (1.75 cup, 240 calorie) servings. SO YUMMY!! Will be making again, SOON!

Fresh Cherry Cobbler

Incredible! I used 3 cups Bing sweet cherries, and only 1/2 cup sugar in with them. NEVER have a heard people rant and rave over a dessert as much as this one. Will be making again, and soon!

Pork Chalupas

Turned out very tasty! However, the description of how much water to add was very vague and I ended up with too much at the end (used 6 cups). I used a 2 lb pork sirloin roast instead of the 4 lb shoulder roast (found a screaming deal! ) and put it in with about four hours left to cook and halved the salt . Will be making again!

Oven-Fried Bananas

AMAZING. I used crushed plain Cheerios instead of bread crumbs and I didn't have any ginger (and I substituted brown sugar instead of fake sugar) but these turned out INCREDIBLE!! Make sure you are VERY generous with the cooking spray though so everything sticks. I served mine with a little bowl of melted chocolate chips! :)

Artichoke Spinach Lasagna

Fan-freaking-tastic! Even though I'm not a vegetarian, I think I prefer this as the best lasagne I have ever eaten. I used whole wheat noodles and didn't bother to boil them first (why bother with that extra step when it turns out perfect anyway?), and used 12 of them. Also used 1 c more mozzarella cheese and slightly more pasta sauce because I couldn't find the packages with the quantities required. Big hit with my whole dinner party, leftovers are already gone. :'(
