Chicken Marsala

It was good, but bland. I altered the recipe slightly by adding onions in with the mushrooms. I also removed the chicken from the pan and put it in the oven to keep warm while I sauteed the onions and mushrooms. I added minced garlic, and put the chicken breasts back in the pan to finish cooking for 10 minutes. The chicken was perfectly cooked, but the reduction sauce was missing something.

Slow-Cooker Tex-Mex Chicken

We eat this at least once a month. It's filling and delicious. I've even taken the chicken cooked exactly as instructed, shredded it, put it on corn tortillas and made enchiladas out of them. Dee-lish!

Good recipe. Nice flavor. I like the red onions instead of using white. And I left out the vinegar. And put 1 cup of chicken broth instead of 1/4.

Balsamic Roasted Pork Loin

It did come out tender and juicy but I felt like the flavor needed something. My husband said the same thing. And it was a bit on the salty side but that's probably more to do with the balsamic vinegar I used.

Tatertot Casserole

Pretty tasty stuff. I did my own thing with it though. While browning the beef I seasoned it with onion powder, garlic powder, freshly ground black pepper, and a smidge of salt. I chopped up one small onion, and after draining the beef I mixed the beef, cream of mushroom soup, and chopped onions together and let them simmer a bit. Then poured the mixture into a 10x10 casserole dish. I added sharp cheddar. Then put the tots on, then added triple cheddar shredded cheese on top of the tots. My family loved it including my 2 year old who typically doesn't eat beef!
