Chicken Breasts with Balsamic Vinegar and Garlic

One of the best recipes on this website, and is staple on my menu! An easy dish, which looks and tastes gourmet. Would recommend for company or entertaining.. I also use white balsamic vinegar, which has been a nice addition.

Shoyu Chicken

I have made this several times. I have used boneless and bone-in chicken thighs, and both taste great. I bake these on a broiler pan @ 375 degrees for about 30-40 mins. However, I would recommend basting the chicken with a pastry brush about every 10 mins, otherwise it can dry out. When marinating, remember to rotate the chicken half way through.

Chicken Pot Pie IX

This will fill you craving for chicken pot pie @ home! It is a hard dish to finish if cooking for two people (an entire pie, ugh!).. but couldn't have tasted better. Experiment with the salt, as I cut back and then wished I had added more. I cut up all the ingredients on a Sunday, and then cooked this on a weeknight.. easy and quick! :)

Apple Strudel Muffins

These muffins were great-- not dry, and the crumb topping really adds that extra professional bakery taste! I cut back on the white sugar by a quarter, and it still tasted sweet enough.

West Indian Curried Chicken

I would definitely use the Jamaican curry.. it does make a difference. I added a few shakes of cumin, turmeric, and coriander after the curry. I used red potatoes (texture was great!), and I tossed in frozen peas and garam marsala at the very end of cooking. Serve over brown rice, yum!!!

Mashed Sweet Potatoes

Delicious! My recommendation-- don't skimp on the butter! I don't add the maple syrup, and use nonfat milk to even out the added butter calorically.

Chicken with Lemon-Caper Sauce

Very good- have made this several times, and I always experiment a little with the lemon juice/white wine ratio. Tonight I served over angel hair pasta with blanched asparagus and fresh diced tomatoes. Deliciously filling, yet light.

Juicy Peach Crisp

I added rolled oats to my topping mix, and this was ready in 30 mins (in a 8x8 pyrex dish).. so be aware of checking your crisp often. I used vanilla extract instead, and that tasted great.
