Cajun Crawfish and Shrimp Etouffe

Used only wild gulf shrimp and added red bell pepper. The seafood seasoning made it a bit too salty for my taste. Watched the video & instructions were easy. Served over rice with collard greens.

Awesome collards! Took the advice of several reviewers and cooked them a bit longer. Used red wine vinegar and molasses. Great flavor and tender.

Dijon-Tarragon Cream Chicken

Great recipe! I deglazed the pan with some Vermouth before adding the cream and used dill instead of tarragon. The chicken was cooked perfectly! Will make again.

A co-worker previously made this recipe & it was delicious! I wish I had read some of the reviews as I probably needed double the sauce & more cooking time. However, it was still quite delicious less crisp & everyone ate it up at the Mothers Day brunch.

Tart, tangy & delicious! I followed the advice of a few other reviewers and added the sour cream topping to finish it off. I also added 1/2 tsp. of salt to the shortbread crust and 1 tsp. of vanilla to the cheesecake mixture.

Chocolate Mint Candies Cookies

Really good cookie recipe! I've using mint chips which I add to the top of the cookie halfway through baking when I rotate my cookie sheet. Agree with others, they are easy to overcook so take them out on the early side & let cook on cookie sheet.

Lime Cilantro Rice

I made this last night- however I used brown rice which adjusted the cooking time. I also, used 1 Tbs. of lime juice per other reviewers suggestions. Served with swiss chard & black beans this was a quick, easy & healthy meal!

Judy's Strawberry Pretzel Salad

I have to admit, I was a bit skeptical about the combination but WOW! So good, especially the salty pretzel crust. I made this in an 11" springform pan. I read the reviews & made a few adjustments based on others recommendations. For the crust, I used about 2-1/2 cups of pretzels & brown sugar; baked for about 8 mins. For the filling, I made my own whipped cream and added a 1tsp of vanilla extract. I chilled this & the strawberry-jello mixture for an hour before combining the layers.
