The Best Chicken Fried Steak

This recipe is all that. The only thing I do different is to pound the steak thinner, then I take a knife and score lines into the top so it has that authentic chx fried steak.

Artichoke Chicken

Not as flavorful as I expected. I will make again but next time I will use artichokes sold in jars that are marinated in oil and vinegar...so flavorful. My aunt makes artichoke dip using jarred artichokes, she drains all the oil off and all of us can't get enough of her dip. I should of done that with this recipe but I wanted to stay true to the instructions. The dish was bland and really not worth all the work and rich ingredients.

Roasted Tomato and Zucchini Salad

Thanks for this reminder on stacked caprese salad. So impressive as a salad and everyone is always so surpised at something so simple but so delicious. I usually use the big beef tomatoes and then I don't have to stack so high.

Fried Avocados

Can be delicious if you use the right type of avocado. Don't use real soft or mushy avocados, buy them a little firm. Please make sure to add some salt to your flour or better yet use seasoned breadcrumbs. Can be a delicious and unexpected appetizer. The ultimate dipping sauce is a seasoned sour cream, such as Lawry's seasoning salt.

Fried Mozzarella Cheese Sticks

Not crunchy enough for us. For crunch, dip in Panko crumbs then fry. You'll find Panko in Asian stores and some big supermarkets. They are super-large crumbs used for frying and will add a thick and crunchy crust that is unforgettable.

Chicken Crunch

This recipe is a 4, but if you want a 5 then don't add the soup but instead add 1 tablespoon of Lawry's seasoning salt to the sour cream then continue on with the recipe. This will kick it up to a 10!

One Bowl Chocolate Cake III

Very light cake, simple to make. Not too sweet, perfect chocolate taste. Surprisingly the batter is very watery, as planned, but bakes up fine. I didn't have any baking soda, still came out great. Baked in a 9x13 pan. No frosting included in the recipe.

Cabbage Rolls

This was an easy way to delicious cabbage rolls. But here's what to do different next time to avoid some major problems: Use fattier ground meat (using dry rice in the meat sucks up any moisture and drys out the meat.) Microwave your cabbage a little to soften it and give it some water content (recipe calls for using raw cabbage which really doesn't get the right amount of steaming when cooking and the cabbage comes out rubbery and chewy). Also remove the thick veins on each cabbage leaf as they take longer to cook. Also add some ketchup for a sweet and sour taste, plus I add more sugar since I like my cabbage rolls sweeter.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

I was a skeptic, but it worked. First time in a long time that I was able to peel an egg. While peeling, I noticed that the shell stayed together in big chunks making it easy to come off the egg. Doing it the old way, the eggs broke in tiny little pieces and stuck to the egg along with the skin making it impossible to peel.

Rich and Creamy Tomato Basil Soup

I use evaporated milk instead of cream; reduces fat and gives the soup a thick and creamy consistency - try it you'll be surprised how good it is. Got this trick from a French restaurant.

Whatever you add or don't add, just don't forget to pour in some Clamato juice--not tomato juice-- but Clamato juice. Will make you hum!! Your guests will keep wondering what the secret ingredient is. I serve with potato chips or sour dough bread with butter.
