Vegetable Chowder

Wow, I can't believe how well this turned out considering I didn't have a lot of the ingredients on hand. I wanted to use up a lot of veggies before they went bad, and this is an incredibly versatile recipe. I used onion, garlic, carrots, celery, & broccoli, with a box of chicken broth (4 cups), then evaporated milk, a little flour, 2c cheese, some cilantro & green onions at the end. My husband and I had thirds, my 6-yr old had seconds, and my picky 3-yr old ate some of it. This will definitely be a stand-by recipe for us. Thanks!

Bacon and Potato Soup

This was really good, but not the creamy typical potato soup. The prep work took a while but otherwise very easy. I used the bacon fat, but apparently too much as it pooled on top.

Rich and Simple French Onion Soup

This soup was AMAZING! I made a few changes: 1/2 stick butter, 1 can Beef consomme, 2 large yellow onions, 6oz Cabernet Sauvignon, no salt/pepper. Then added a slice bread & 1/2 slice provolone on bottom of bowl before adding soup, then whole slice provolone & slice of Muenster & grated parm on top, which made the soup very hearty.

Artichokes

Scrumptious Sweet Potato Casserole

I made this with a large/tall can of sweet potatoes (about 4 2/3 cups) in a 9x14 dish. There wasn't enough sweet potatoes, and too much topping. It was still delicious and super sweet. Next time, I'll use less sugar when using canned, & add some spices, but maybe not as much milk when using canned. Might not use all the topping next time either.

Creme Brulee French Toast

I've made this about 20 times in a variety of sized pans & combinations of eggs to bread getting it all to fit. Sometimes it's dry, sometimes too custardy, but ALWAYS SOOOOO YUMMY!

Grilled Garlic Artichokes

Was very tasty especially w/ adding balsamic vinegar before serving. Also added thyme to the oil mix. Grilled too long and they got crispy/charred, but still good. Started the timer for 30min when I put the pot on to boil, so I don't know how long they cooked for but it was enough. Maybe cut back on the olive oil, or use light next time.

Quick Chicken Enchiladas

Overall a great dish. I give it 3.5 stars for taste (good for kids, grown-ups added hot sauce), but 5+ stars for ease of assembly, ingredients and quickness for when you have a screaming toddler hanging on your legs!

Slow Cooker Spaghetti Chicken

This recipe served its purpose very well. I needed a recipe for the ingredients I had on hand, and that could be kept warm for hours until we needed to eat. This tasted like "comfort food", and everyone loved it. Next time, I will use less spaghetti because my crockpot is small and everything didn't fit. The only problem with this recipe is you have to wash three pots (chicken, spaghetti, and crock pot), but other than that it is a great pot-luck type of dish.

Urban Legend Chocolate Chip Cookies

My husband just LOVES these cookies, but they are a pain to make. The prep time is NOT 15 minutes, more like an hour to do the oats and chocolate, and get everything mixed together. I've made these twice, my old mixer couldn't handle the thick dough, then my KitchenAid handled it very well. But everyone raves about these cookies, so I guess its worth it.

Carrie's Artichoke and Sun-Dried Tomato Pasta

Very easy and very good. The hardest/longest part was chopping all the veggies. The jar of sundried tomatoes I used were chopped too small for my liking. Tastes great re-heated the next day, too.

Six Can Chicken Tortilla Soup

I've been using this recipe for about a year now and all my friends and relatives have started using this recipe too. This soup is great when you're sick because its easy to make and clears you right up. I use the Carribean-style black beans w/ lime and peppers, and Rotel Mild tomatoes with lime and cilantro. These two cans make a huge difference. Then I top with shredded cheese, sliced olives, chips, and cubed avacado. YUM! Thank you Terryn for a family staple in our house!

Crunchy Green Bean Casserole
