Scallop Scampi
I have tried other scampi recipes on this website, but this one is hands down the best. I didn't have fresh parsley, so I used 2 tsp. of dried. I omitted the onion, simply because I thought a large onion would overpower the garlic flavor, which I like better in scampi. I doubled the sauce like other reviewers suggested, because as is, it is not even enough for 4. I used langostinos (tiny lobster tails) instead of scallops too, and served this with a lemon wedge, extra romano cheese and semolina italian bread to mop up the wonderful sauce. Everyone raved about it and went back for seconds. I will definitely make it again!

Lemon Pasta Sauce
Wow! This is just so unexpectedly delicious and versatile! I used it with lemon chicken pasta purses, along with crab cakes one time, and another time with breaded tilapia and the same pasta. Just let the sauce cool a bit before adding the lemon juice, or it gets a little clumpy looking. Also, I didn't have a lime, but just doubled up on the lemon juice and it was still awesome! This is a keeper!

Wicked Garlic Tofu Saute
This is now my favorite tofu recipe! First, I steamed a crown of fresh broccoli, and a cup of fresh chopped carrots, and set them aside. Then I fried a chopped, small onion and a pint of fresh sliced mushrooms, and mixed them with the carrots and broccoli. Then I did Step 1 of the recipe directions. After Step 1, I left everything in the pan, added the rest of the veggies I already cooked, and the oyster sauce (and a shot or two extra due to all of the veggies), and served the dish over brown rice. I thought it was full of flavor, and my tofu-hating family absolutely loved it!
