Vegan Brownies

Just made these the other day and think they are quite good! I've not tried any other vegan brownie recipes, but imagine the results can run the gamut. I followed the recipe fairly closely and was happy with how they turned out. I only had about a half cup of white sugar left, so I added a cup of brown sugar, and used coconut oil instead of vegetable oil and ended up only having about 3/4 cup. Other than that I added about a tablespoon of molasses, and about a cup of vegan chocolate chips. I baked them for 25 mins and checked them...they were still a little shiny so did 30 mins total and after cooling they were a little cakier around the sides and chewy in the middle. Will definitely be making these again and trying some of the modifications mentioned by other reviewers!

Veggie Burgers

I used this recipe as a starting point and added some other veggies I had on hand (mushrooms, spinach, broccoli & corn). I used mostly oats for the binder and just a few tablespoons of flour and some cornmeal too for texture. I tasted the mix with just the soy sauce and it was pretty bland so I added more salt & pepper, some curry powder, coriander, cumin and sweet paprika. I didn't have time to grill them, so I dusted them with more cornmeal and put them in the oven at 350 for maybe 15 minutes a side. I got 6 decent sized patties out of the recipe and ended up flattening them a bit during cooking because they seemed to still feel a little mushy inside. Overall, I think it's a great veggie burger base recipe, but I could see adding quite a bit more for flavor. Maybe some ketchup and worcestershire or liquid smoke as other reviewers said. Will definitely be trying them again!

Strawberry/Rhubarb Crumb Pie

This was a great recipe! We got some rhubarb in our CSA box and I had never eaten or cooked with rhubarb before. Based on some of the previous reviews, for the filling I added a tsp of cornstarch and the consistency is perfect. I only used about half the sugar, and I also had a peach on hand so I added that. For the topping I upped the oats to 3/4c and used just under the 1/2c of butter. YUM!! Edit: Now that the pie is 1/2 gone, I can see that the bottom crust is still a little underbaked in the middle. I would suggest blind baking the crust for a few minutes.
