Baked Ziti with Sausage

I usually add mushrooms and spinach to the sausage. I also cook the onion and seasonings with the sausage mixture. I use whole wheat pasta and fat free ricotta. I don't always layer it either, I just mix it all together and top with cheese.

Hamburger Steak with Onions and Gravy

This was excellent!! I made very little changes. I added mushrooms with the onions. and I subbed 3/4 cup of red wine for the small amount of sherry. I was also using double the amount of meat, so I added a total of 1 1/2 cups broth. I left out the seasoned salt. Everyone loved this dish! Simmering the meat in the gravy makes it so tender! Excellent with mashed potatoes and brussel sprouts.

Chicken Pot Pie IX

I haven't made a good chicken pot pie in ages, but this was wonderful. I boiled the veggies in broth instead of water, then saved that broth for the rioux. I didn't really measure the broth or milk when making the rioux. I used fresh thyme. For the chicken I used some leftover roasted thigh meat I had. I also added some canned corn, and used the 'butter flaky pie crust' recipe for the crust. My tip: skip the bottom crust and only do the top. The bottom crust is always soggy, and it seems like I always have too much crust. It doesn't cut into perfect pie slices but I prefer it this way. I do this with fruit pies too.

Butter Flaky Pie Crust

Perfect flaky crust! I really tried to handle it as little as possible and I think that helped. I added ice cubes to my water, before slowly adding it. I don't think I used all 1/4 cup of water. I also subbed 1/4 cup of the all purpose flour for whole wheat. I used the crust in a chicken pot pie and it was heavenly.

Fluffy Pancakes

This is my go to pancake recipe. My only change is that I use 1 tbsp of vinegar instead of 2. I love adding things like blueberries, chocolate chips, or shredded apple and cinnamon to these! They come out perfect every time.

Slow Cooker Lentil and Ham Soup

This was delicious! My first time cooking lentils. I used french lentils. I decided to omit the basil and use fresh thyme. I subbed 1-2 tsp. tomato paste for the 8 tsp. sauce. I used veggie broth instead of chicken. I also added about 1/4 cup pureed butternut squash I needed to use up. It gave the soup a little thickness. I cooked on high for 5 1/2 to 6 hours. I love soups and will definitely add this to my list of favorites!!

Grandma's Homemade Banana Bread

Great recipe! I followed exactly except for one change: I used 1 cup white sugar and 1/2 cup brown. I also needed an extra 5 minutes to bake, that's it. This banana bread was super moist and delicious. Tastes amazing the next day too!

Yummy Sweet Potato Casserole

BEST sweet potato dish EVER!! I did use all brown sugar, walnuts instead of pecans, and added 1 tsp cinnamon and 1/2 tsp allspice to the crumb topping. I baked at 350 alongside the turkey. I also did alternate horizontal stripes of crumb topping and marshmallows. This will be my go to sweet potato casserole for years to come.

Never Fail Applesauce Spice Cake

This cake was delicious! I did make a few changes. I used part brown sugar instead of all white sugar, used oil instead of butter, and also I also frosted with a brown sugar frosting. Made the frosting by bringing 2 cups brown sugar, 1 cup heavy cream, 2 tbsp butter, and 1/4 tsp cream of tartar to boil. Let boil for 2 minutes. Let cool for an hour, then using a mixer, add in another the rest of the stick of butter you cut the 2 tbsp from, plus a second stick. Refrigerate the frosting to set.

Sausage & White Bean Soup

This soup was amazing! I omitted the proscuitto and used chicken apple sausages I already had on hand. I also added an extra carton of stock, and also added some minced garlic. I used fresh thyme sprigs from my garden. I invited my neighbors over for dinner and everyone loved it. It was even more delicious in the days that followed, as leftovers. I would definitely make again. I served with 'bread machine rolls' from allrecipes.

Original Nestle® Toll House® Chocolate Chip Cookies

This is my tried and true recipe for chocolate chip cookies. The recipe os printed on the back of the bags of chips usually. Great recipe! You can change the chips--white chocolate, peanut butter, whatever suits you.

Pasta Fagioli

This was excellent! I used 1 can of diced tomatoes instead of 2 fresh, 1 carton of stock instead of a can, and a 14.5 oz. can of tomato sauce. The red pepper flakes made it have a wonderful spicy flavor but not too strong. I used 1/2 cup ditalini pasta. I served this with 'bread machine rolls' found here on allrecipes. Would definitely make again!

Grandmother's Oatmeal Cookies

Great recipe! I was skeptical about adding the eggs to the mixture after adding flour instead of with the sugar mixture but they turned out great. I used half whole wheat flour, butter in stead of shortening, and also used craisins/pumpkin seeds instead of raisins/walnuts. I also reduced the salt to 1/2 tsp. Delicious recipe!

Wild Rice Stuffed Acorn Squash

This was just ok. No one really ate it. I enjoyed the filling but the squash was dry and tasteless. I did have to substitute another type of squash since acorns aren't in season yet.

Kentucky Biscuits

Pretty good. My biscuits never rise as much as in the picture. Maybe 1/2 an inch. I didn't handle the dough any more than necessary. They still tasted good with my chicken and gravy dinner. A little dry though. I would add more salt.

Beef Stroganoff III

I would give this recipe 10 stars if I could! I followed some reviewers tips and marinated the meat in red wine while I was preparing the other ingredients. I used fresh mushrooms and cooked them along with the onions. I also added some fresh thyme. I poured the wine and cooking liquid from the meat back in with the broth to make the sauce. I also used more broth than called for, as it evaporated slowly as it cooked. I think I simmered for 1 hour. I used dijon for my mustard and cornstarch to thicken. I have made many beef stroganoffs and this was by far the best. Definitely a keeper.

October Apple Pie

Delicious!!! I used 4 granny smith apples, 1/3 cup white sugar, no brown sugar, 3/4 tsp lemon juice, 1 tsp cinnamon, and followed the rest of the ingredients/directions as written. It was sweet enough with my changes, love the caramels in it. I did turn down the heat as recommended, and covered my crust with foil to prevent burning. Would make again!

Grilled Orange Chicken

Very tasty! I used 4 chicken leg quarters. I used green onions instead of chives, since that's what I had in my garden. I also substituted 1/2 tsp. ground sage. I substituted garlic powder for garlic salt. For me personally, the vinegar taste was a little strong when using as a sauce. Next time I would just use it all to glaze the meat with. Would make again.

Bread Machine Rolls

After reading the reviews I reduced the sugar to 1 tbsp. I also added 1/2 tsp garlic powder to make garlic rolls. I shaped them into 18 balls, let them rise covered in the microwave, and baked them. They turned out wonderful. Next time I might use 2 tbsp sugar but I think 3 is definitely too much. I also topped them with a butter/garlic/herb spread before baking. (I also used 1 cup milk/water because I didn't have milk powder)
