Chocolate Covered Peppermint Patties

I followed the recipe and they are delicious! I needed over 20 ounces of chocolate to dip them all though. I did use instant mashed potatoes, but I mixed them thicker (with less water) than the instructions call for and didn't add any butter to them. I needed about 9 cups of icing sugar. At first the mixture was a bit runny/wet, and I thought it would never form dough, but I chilled it for a little while and it was fine. I let the patties dry overnight as instructed. I didn't have any problems with the patties falling apart, until the end when I didn't have very much chocolate left and it was getting thick. I kept my melted chocolate in a double boiler though, I think it would be very difficult to keep it melted by microwaving. I used a bent fork to dip them and wiped off the excess on the edge of the double boiler. This made about 120 candies, I think next time I will start with less potatoes, maybe half or 3/4 of a cup. They are delicious though, and I drizzled them with melted green mint chocolate chips for decoration.

Rainbow Trout with Yogurt Sauce

This was delicious, but next time I will only make 1/4 of the amount of sauce. The sauce was tasty, but it would be soup if I used all of it.

Peanut Butter Balls I

I made a big mistake and mixed the chocolate chips in with the other ingredients - oops! It was too late to fix it, so I decided to microwave the whole works for 90 seconds to melt the chocolate, then I mixed it all together. That seemed to work and I was able to roll it into balls and dip them in the coconut. I'll have to try the recipe properly another time, I'm sure it would be much better, but they are yummy this way too!

Chocolate Mint Candies Cookies

These turned out really nicely and are very rich and delicious. I left the dough in the fridge overnight and it was hard as a rock in the morning. I was afraid I'd ruined it, but I managed to scoop it out and shape it into balls and they baked up fine. I found I had to put them back in the oven for 30 seconds to get the chocolate to melt - probably because I didn't have the right kind of chocolates, I couldn't find thin mints so I used small bits of mint chocolate bar.

Zippy Beef Bake

I am not sure if green chilies and jalapenos are the same but I used jalapenos and it was a bit too spicy for us. My husband won't even eat it. I like it, but it is pretty hot. Other than that, though (probably my fault), it's a great dish!

Quinoa and Black Beans

This recipe is a favourite at our house, but I substitute a can of diced tomatoes for one of the cans of black beans, and I use Italian parsley instead of cilantro (hate cilantro). The kids like it the way it is, I usually add hot sauce to mine.
