Mom's Best Macaroni Salad

This was a HUGE hit. I cut the sugar and it was perfect. It is plenty sweet even when the sugar is cut in half. When you are not sure if you should serve cole slaw or macaroni salad, this is a great compromise. YUMMY!!!

Glazed Corned Beef

My six year old daughter has requested this for her BD dinner for the past two years. My husband, when I first made this, just went... "ugh..corned beef" and was so skeptical. Guess who requests this now?? Yep! He is a convert! It will easily simmer in a crockpot all day in its bath, then you can take it out and do the glazing part in the oven. I have found that this makes the most tender cut. I have made it all the different ways, and that is my favorite method.

King Ranch Chicken Casserole I

This was easy, but are the measurements off? I opened a 14.5 bag of chips and it was overflowing the pan, so that didnt seem right. Maybe it depends on the brand of chips. I went ahead and used only half of the chips, but ended up doubling the sauce. I was worried about the chips being too crunchy on the bottom, so I was sure to cover them completely, then stirred them to assure they were all in the sauce and there were no dry areas. I am not sure how dry it would have been without doubling the sauce. The only other thing I did with the onions was to saute them in butter before adding them to the dish. That is a personal preference, though. The flavors were good, it just seemed to be "dry" as written. Again, maybe it was just my brand of chips, but it was still good.

Fluffy Pancakes

I will never use boxed again, I will never use boxed again, I will never use boxed again....:) My family ooohed and ahhhed over these. Made exactly as written and they came out oh so good! Very easy to make, too! My family says a BIG THANK YOU to the submitter of the recipe!!

Slow Cooker Mongolian Beef

We liked this. I used a sirloin steak and let it cook for about 5 hours. I really think it depends on the hoisin sauce you use in this recipe. Also, I did think it was a bit salty, so I would probably try lite soy sauce next time. For veggies, I would recommend steamed broccoli. All in all, it went over pretty well and was very easy to make.

Quick and Easy Alfredo Sauce

My husband said "excellent!". OK, it was for a dinner party, so calories were not an issue. Instead of milk and garlic powder, I actually heated some heavy whipping cream and added fresh garlic to infuse the flavor. I also slightly heated the cream cheese for about 15 seconds in the microwave to soften it. This was a really easy recipe to follow. Everyone seemed to love it. I blackened some chicken breast tenders a laid them on top. Yummy! Great dish for a party!

Blue Cheese Burgers

Let me just say, I HATE blue cheese, but my husband loves it, so I decided to make these for him. Boy was I surprised when I tried them. Somehow it works really well. Even my 3yo ate a burger, and she is picky. The BC was not overpowering for me or for any of my children, which was a nice surprise. Blends nicely. Really good burgers. Thanks!!

Southern Style Thanksgiving Green Beans

These are really good and really easy. You can do them in the crockpot or stovetop. I have also used bacon or a chopped, smoked turkey leg in lieu of the hamhock. I no longer used canned green beans. Much like my Nanny used to make. Good memories!!!

Daddy's 'If They'da had This at the Alamo we would'ha WON!' Texas Chili

This was really good. My husband and kiddos really liked it, and my husband does not like chili. This converted him, though. I have made it with chili meat, stew meat, and ground beef, but I prefer the ground beef (or game) because chili meat is too gristly for me. It makes alot, by the way, but freezes well! Be sure that your ground red pepper is NOT cayenne unless you want to blister your mouth! :) Cayenne can be added for more heat, though. I could not find ground red chile pepper, so I assumed ground chipotle pepper would work, and it does. I added about 3 tablespoons of that and it added a smoky flavor. It kinda reminded me of hot dog chili due to its consistency. I took a poll of who wanted beans in the chili, but nobody did. True, being from Texas, we just don't typically add beans to our chili. All in all, pretty easy to make and filling. My kids even asked for me to send it to school with them so they could heat it up for lunch! They are young and don't tolerate too much heat, but this is perfect for them. If it is too hot, you probably added cayenne pepper instead of another type. Lastly, it does well in a crockpot if you are not home during the day. I usually let it simmer on low.

Broccoli and Tortellini Salad

This is always really popular when I make it for get-togethers. I blanch the broccoli and boil the raisins, which makes them plumper and juicier. I, too, reduce the sugar and I like sweet stuff, but it only needs to be sweet to taste. I have received numerous requests for the recipe and it is very easy to make. I always let it sit overnight before I serve it since I think most salads improve in flavor as they sit.
