Blueberry Dump Cake

I believe this recipe definitely has possibilities, but as a number of other reviewers have suggested, it absolutely needs another approach with the butter on top of the cake mix. I used 12 oz. fresh blueberries and two large fresh peach--hence peach and berry dump cake. When I make it again I will add some lemon juice and reduce the sugar to 1/4 cup as 1/2 cup made it entirely too sweet. Even though I spotted the cold butter on top of the cake mix, it still had spots where it was just dry cake mix. Perhaps the buttermilk is a possibility or even cutting in the butter with a pastry blender. Will let you know when I make it again. Served it with whipped topping.

Frank's Favorite Slow-Cooker Thai Chicken

Absolutely delicious, even with a couple substitutions! Using what I had on hand, I used regular coconut milk, medium (not hot) salsa and honey instead of sugar. Because I started a little late (noon), I cooked it on high for 3 hours, then on low for 3 hours. It was fall apart tender. Cooked some jasmine rice and added some shallots, red pepper, and snap peas at the end to make a very complimentary side dish. Our guest thought I was a gourmet cook. I will absolutely make this again! Thank you for a thoroughly enjoyable recipe and quite simple.

Seattle Cream Cheese Dogs

These were a particular delight because we rarely treat ourselves to hot dogs and sauerkraut due to my husband's sodium restriction. However, we really watched our sodium the rest of the day to be able to try these. He drained and rinsed the kraut well, added some chopped onions and pepper cooking that for probably 15-20 minutes. The dogs went on the grill and we used Edmond Fallot's Dijon mustard (a GREAT flavor)to top it off, along with the kraut on top and cream cheese on the bottom of slightly warmed buns. What a treat for not only him, but me as well. We've highly recommended this to many!! Thanks for sharing!

Mexican Bean Salad

Everyone LOVED this salad on Super Bowl Sunday. Friday night I tossed it together for the occasion on Sunday at friends. I always make recipes "as written" the first time. Sunday morning I tasted it and it was heavenly. Then, because of my love of cilantro, I added additional and more hot sauce. Next time I think I will add a jalapeno or two since I like spice, as well as a couple stalks of celery. Not only is this a beautiful salad, but quite easy to put together, healthy, and most gratifying to the tastebuds. Thank you for posting; I will make it again for certain!

Cranberry Pistachio Biscotti

Prepared these EXACTLY as recipe stated today and I will make them again and again (mostly as gifts; they are that good). My husband and I sampled the ends and he was very pleasantly surprise (I wasn't surprised!). Upon removal from the oven initially, I did cover them with a kitchen towel as one reviewer suggested and had no cracking at all. Thanks to other reviewers, I did the "put your weight into it when you cut" without a serrated knife and walla--perfecto! From me and some of my Christmas recipients, I thank you for this recipe!! Sometime I will try it with dried blueberries, almonds, and anise flavoring (my husband's favorite).

Bacon, Lettuce, and Tomato Macaroni Salad

Very nice salad, however I didn't find the lettuce. I assume you serve it over a bed of chopped lettuce. I also added halved cherry tomatoes (kept it cleaner and tidy) and diced hard-boiled eggs (my husband's request). I also included some fresh dill (our love). I will make this again!

Slow Cooker Carnitas

I always try to make a recipe "as written"; that is the case with this with the exception of cooking time. I cooked it on high for 2 hours, then turned it down to low for 4 hours. It turned out perfect, literally coming apart as I removed it from the pot. None of us, dog included, could hardly leave it alone until today (Super Bowl day). Today I will saute up some onions, peppers and chilies to go along side for those who like them, and of course the grated cheese, sour cream, etc. Thanks for sharing Erin; I will make this again!

Tartar Sauce I

This is good tartar sauce for when you haven't any commercial on hand. I use it often when my regular is outdated. Always have these ingredients on hand. Be sure to use Best Foods or Hellman's mayonnaise (they are the same thing); others don't compare!
