Peanut Butter Cookies IX

These came out very well! All my friends liked them. They are not too peanut buttery, just a nice taste of it which was good because one of my friends isn't too crazy about peanut butter. But she ate 3 of these! I used light brown sugar as light or dark wasn't mentioneed. I didn't want the cookies to be too sweet and they weren't. The light brown sugar was a good match to the peanut butter. Like some others suggested I used a dash of nutmeg and pressed the cookies with a fork. The nutmeg came through nice as well , and my cookies were not crumbly at all. I changed the recipe to make 24 cookies, and at first it didn't look like there was enough of everything, but once all the ingredients were combined together and I was scooping the dough/mixture onto my cookie sheet, there was plenty. I am definitly making these again! Just watch the oven time, I did overcook mine slightly , not burnt but a little to crunchy. Entirely my fault. Check them with a toothpick and then if they are not done , only leave them in for about a minute or so at a time, checking them often.

Candied Bacon

I rated this recipe already, but wanted to clarify: I originally gave it 3 stars as stated in my review. However I reevaluated my decision and changed it to 4 stars which I think was more fair for my experience with this recipe. I liked the outcome of it-the candy bacon comes out tasty- it was just a lot of work to do, as you have to constantly baste the bacon. I may experiment with this recipe some more, but I am also interested in looking at others.

Chicken Zucchini Casserole

Made this the other day. It was delicious! I used cream of chicken soup with herbs-I don't know how plain cream of chicken would have been but the recipe came out very tasty! I seasoned my chicken with salt and pepper- I personally think it could have used a little more pepper but that's just me. I also added half a parsnip, and half the carrot instead of just one whole carrot. Again, just my own little spin on it-you could taste the parsnip and it went well with everything else. Lastly, I topped with shredded cheese a few minutes before it came out of the oven so it would melt. My friend had some and he enjoyed it a lot too. I will definitely be making this again! Thanks for the recipe Bev :)
