Pecan Crescents

I absolutely love these cookies. I have been using this recipe for years, several batches every holiday and just anytime else I want to have some. It's a great little cookie and easy to make...maybe a bit time consuming, but so simple that I enjoy making them. Recently I made a batch the regular way and a 2nd batch with mini chocolate chips (without pecans). For the chocolate chip ones I formed the dough into balls and flattened them into discs between the size of a U.S. quarter and a half dollar, and about 1/4 inch thick; dredged them in powdered sugar after baking, as the pecan ones are. Different form for a different taste. The hubs (who is a chocoholic) really liked the chocolate chip version. Both ways they have a nice little crunch when biting into one. They aren't too sweet, either. I enjoy them either way.

Vanilla Wafer Cookies That Are Better Than Storebought

I made this recipe tonight and I have to say that they really ARE better than bought, by a mile! If I hadn't made them to put into another recipe, they would probably all be eaten by now. Vanilla Wafers are one of my hubs favorite snack foods, so I will beat him off of these until I can get my final product made. For anyone who had a problem with the cookies spreading, cover the bowl of cookie dough with plastic wrap and chill it in the fridge for a couple of hours before baking. UPDATE: These were somewhat chewy rather than crispy after they cooled, even though they were crispy when still warm. That says to me that they need more baking time or need to be completely cool before removing from the cookie sheets, or both. They taste wonderful, though. I will experiment with them until they come out right.

Kiki's Borracho (Drunken) Beans

I absolutely LOVE Borracho Beans! I eat them in Mexican restaurants a lot, but never had a clue how they were made to get this great flavor (although I did know what Borracho means and that they probably had beer in them). I will be making these often. Thanks for the recipe Kiki!

Tangy (Not Sweet) Tartar Sauce

Dill is the only tartar sauce I've ever eaten, also. I can't imagine anything sweet on fish. Thanks for the recipe, now I won't have to buy it in a jar.

If you had trouble spreading the refried beans, try heating them a bit before spreading. That should soften them enough to make them spreadable.

Pickle Rolls

My mother-in-law gave me this recipe many, many years ago. I use the kosher dills which are sliced in quarters lengthwise. Even though the recipe photo shows they used this type, the recipe doesn't state it. I always dry the pickles with a paper towel before using them, otherwise the moisture with the cream cheese gets messy. (The recipe also neglects to state which flavor of pickle to use.) Since the recipe doesn't specify which type of ham to use, I always use a good brand of sandwich ham because it is sliced thinly enough to make the rolling easy.

Confetti Rice with Carrot, Celery, and Almonds

Loved it! It tasted good as well as being easy to make. I chopped the veggies the night before and put them into separate small zipper type bags. The next day I put it all together. Easy! I liked baking it rather than having to cook it on the stove top. I can't imagine it turning out any more perfect than it did. I wish I'd thought to take a photo of it. Will be making it again for sure!

Spooky Witches' Fingers

The cute factor put these over the top. I liked the taste of the cookies, but I have a recipe that I actually like better that I think I will use next time. That said, the final product was REALLY cute! I put a drop of green food coloring (everyone knows witches have a green pallor to their skin), and used the red jel under the "fingernail" and on the "severed" end of the fingers. Everyone was a bit taken aback at first and then they laughed. No one refused to eat them. Great for a party!

Hawaiian Chicken Kabobs

Made these last night. Excellent! I did make a couple of alterations. I added the juice of half a lime to the marinade and used chunks of green bell pepper and onions on the skewer with the chicken and pineapple. While it was cooking outside, even our dog was freaking out because it smelled so good! Later my husband asked me where I wanted to eat out Friday night. He said that it didn't matter to him because it wouldn't taste as good as what I cooked last night! Huge compliment! Huge!

Very good. The only thing I changed was cutting the recipe down to two servings. Just the hubs and I, and both of us really liked it. It was a nice change from the other breakfast casserole that I make.

Rum or Bourbon Balls

This is a great tasting and easy recipe. I didn't roll them in ground nuts, and I rolled the balls in powdered sugar more than just once. I allowed them to mature in the refrigerator in a plastic zipper bag, left partially open so it could breathe. After a couple of days the sugar was almost completely absorbed into the candy, so I rolled them in sugar a second time, and when it had almost absorbed again, I rolled them a third time. The only other thing I did differently was that I used a good brandy instead of bourbon or rum (even though I had both). I served them to some friends we invited over for dinner right before Christmas. I am now sharing the recipe with those friends because the wife has overheard her husband several times telling his friends how good those brandy balls were. Quite a complement! Thanks for the recipe!

Double Layer Pumpkin Pie

Although I haven't tried this specific recipe, I have made ones which are identical or almost identical. I love it, but my husband hates pumpkin in any form. So instead of the pumpkin top, I use instant chocolate pudding using the instructions on the box for pie filling. He loves that one.

Four Egg Yellow Cake

I made this cake this evening. I used two 3"x 8" round pans. I think three 2" x 8" pans would work well with this cake. If the recipe was any larger it would have been too much for those two pans. For some reason I had never tried to make a yellow cake from scratch before. This is just too easy to make to ever buy another box yellow cake mix again! It is moist and tender, and it smells heavenly and my nose is a good indicator for how something will taste! (Haven't cut it yet. Going to serve it with fresh strawberries and whipped cream.) Didn't change a thing in the recipe.
