Hawaiian Chicken Kabobs

Made these last night. Excellent! I did make a couple of alterations. I added the juice of half a lime to the marinade and used chunks of green bell pepper and onions on the skewer with the chicken and pineapple. While it was cooking outside, even our dog was freaking out because it smelled so good! Later my husband asked me where I wanted to eat out Friday night. He said that it didn't matter to him because it wouldn't taste as good as what I cooked last night! Huge compliment! Huge!

If you had trouble spreading the refried beans, try heating them a bit before spreading. That should soften them enough to make them spreadable.

Pickle Rolls

My mother-in-law gave me this recipe many, many years ago. I use the kosher dills which are sliced in quarters lengthwise. Even though the recipe photo shows they used this type, the recipe doesn't state it. I always dry the pickles with a paper towel before using them, otherwise the moisture with the cream cheese gets messy. (The recipe also neglects to state which flavor of pickle to use.) Since the recipe doesn't specify which type of ham to use, I always use a good brand of sandwich ham because it is sliced thinly enough to make the rolling easy.

Cheesy Ham and Hash Brown Casserole

Very good. The only thing I changed was cutting the recipe down to two servings. Just the hubs and I, and both of us really liked it. It was a nice change from the other breakfast casserole that I make.

Chocolate Rum Balls I

I made these using homemade vanilla wafers from this site. I decided to try a good brandy instead of rum. The longer these mature the better they get. At first the alcohol is really strong, but after a while it begins to mellow out. It takes more than just a couple of days. These are very nice when mature. I had to roll them in powdered sugar twice. The first time, after a day or so, it had absorbed into the candy, which actually made it taste even better. I think I will try the recipe sometime using rum, and maybe even try it using a good bourbon.

Vanilla Wafer Cookies That Are Better Than Storebought

I made this recipe tonight and I have to say that they really ARE better than bought, by a mile! If I hadn't made them to put into another recipe, they would probably all be eaten by now. Vanilla Wafers are one of my hubs favorite snack foods, so I will beat him off of these until I can get my final product made. For anyone who had a problem with the cookies spreading, cover the bowl of cookie dough with plastic wrap and chill it in the fridge for a couple of hours before baking. UPDATE: These were somewhat chewy rather than crispy after they cooled, even though they were crispy when still warm. That says to me that they need more baking time or need to be completely cool before removing from the cookie sheets, or both. They taste wonderful, though. I will experiment with them until they come out right.

Kiki's Borracho (Drunken) Beans

I absolutely LOVE Borracho Beans! I eat them in Mexican restaurants a lot, but never had a clue how they were made to get this great flavor (although I did know what Borracho means and that they probably had beer in them). I will be making these often. Thanks for the recipe Kiki!

Oven Pancakes

Delicious with the addition of a half teaspoon of real vanilla. I can't imagine it being as good without the vanilla, but then, I'm not a real fan of egg flavor. Since I did alter the recipe I gave it what I think it would have been without the vanilla, since it wasn't a part of the recipe. Thanks for the recipe JHERCIK!

Pineapple Upside-Down Cake VII

I've always made pineapple upside down cake using the pineapple juice for the liquid, like CANDIEB. I had no idea anyone else did it this way. As they say, great minds think alike, but I've never seen a pineapple upside down cake made with white cake. It is usually yellow cake, but pineapple cake mix is the best! Yummers!

Tuna Noodle Casserole from Scratch

This is basically the same recipe I've been using for the last 50 years. I HATE creamed soup in the majority of recipes and tuna, in my opinion, is not an ingredient which can fight the chicken or mushroom soup taste and win out! A good cream sauce is neutral enough that it lets the tuna flavor shine. I also leave out the veggies and serve them on the side. Spraying the pan with cooking spray is ok, but butter tastes better and for this it works just as well to prevent sticking. Also, one should let the flour/butter mixture simmer for a few seconds stirring constantly, before adding milk, to get rid of the raw flour taste. I add the cheese to the cream sauce and stir until it melts, stir in the tuna and then pour everything over the noodles and stir. Then put in the prepared baking dish.

Confetti Rice with Carrot, Celery, and Almonds

Loved it! It tasted good as well as being easy to make. I chopped the veggies the night before and put them into separate small zipper type bags. The next day I put it all together. Easy! I liked baking it rather than having to cook it on the stove top. I can't imagine it turning out any more perfect than it did. I wish I'd thought to take a photo of it. Will be making it again for sure!

Spooky Witches' Fingers

The cute factor put these over the top. I liked the taste of the cookies, but I have a recipe that I actually like better that I think I will use next time. That said, the final product was REALLY cute! I put a drop of green food coloring (everyone knows witches have a green pallor to their skin), and used the red jel under the "fingernail" and on the "severed" end of the fingers. Everyone was a bit taken aback at first and then they laughed. No one refused to eat them. Great for a party!
