My Pina Colada Rum Cake
About this Cook
My mother worked, so I began to cook when I was about 9 years old. I managed not to set the house on fire and came up with some edible concoctions. I've been building on it ever since. Other parts of my life were also fairly successful. I have always loved dogs and was fascinated by pure bred dogs and dog shows that I would see on t.v. As an adult, my husband and I got involved in quality purebred dogs. We devoted around 20 years or so to the local kennel club and breeding, training and showing our own purebred dogs(and occasionally someone else's). Dog showing took us to almost every state in the union. We spent quite a bit of time on the road going to one show or another. Dog showing took us to almost every one of the states. We traveled in our motorhome, and cooked our meals most of the time. Now days we spend most of our time close to home, except for visiting relatives, or that occasional splurge trip. We've been to Israel, Maui, Grand Cayman, Jamaica, and Cozumel, so far.
My favorite things to cook
I like good solid American cooking, some Tex-Mex, and some oriental style foods. I don't like to fry foods, because I seem to be a magnet for spattering hot oil, but I do stir-fry quite a bit. I suppose my very favorite thing is baking, but don't do it for us very often due to the un-needed calories.
My favorite family cooking traditions
I usually do the birthday, wedding, and anniversary cakes for the family and friends. At Thanksgiving and Christmas I make tons of homemade candies and treats for the family, it's almost like an obsession and everyone has their favorites. I can't slight anyone so I make all of them. If I have the time I also make a gingerbread house at Christmas. Then all of us spend the next 300 days trying to get rid of the weight gain.
My cooking triumphs
The photo on my page is my own Pena Colada rum cake recipe. I came up with the recipe after one of our trips to the Caribbean where I bought a Pena Colada rum cake. I was blown away by it! I decided that I couldn't wait until our next trip to the Caribbean to have it again, so I worked on my own recipe until it was exactly like the one I bought. I haven't shared the recipe with anyone, not even my own family, as yet.

Oven Pancakes
Delicious with the addition of a half teaspoon of real vanilla. I can't imagine it being as good without the vanilla, but then, I'm not a real fan of egg flavor. Since I did alter the recipe I gave it what I think it would have been without the vanilla, since it wasn't a part of the recipe. Thanks for the recipe JHERCIK!

Tangy (Not Sweet) Tartar Sauce
Dill is the only tartar sauce I've ever eaten, also. I can't imagine anything sweet on fish. Thanks for the recipe, now I won't have to buy it in a jar.

Pineapple Upside-Down Cake VII
I've always made pineapple upside down cake using the pineapple juice for the liquid, like CANDIEB. I had no idea anyone else did it this way. As they say, great minds think alike, but I've never seen a pineapple upside down cake made with white cake. It is usually yellow cake, but pineapple cake mix is the best! Yummers!
