Fig and Lemon Chicken

Good recipe for the sauce... I did something different with the chicken.. I used boneless cutlets and stuffed them with goat cheese and fig, wrapped in prosciutto. Once the dish was done, I drizzled it with honey. It was spectacular!

Slow Cooker Chicken Parisienne

Really delicious and easy. I followed the advice of another reviewer and added 1/2 onion and 2 cloves of garlic. The chicken only took about 4 hours to cook on low, so you may not want to let this cook away all day.

Stir-Fried Chicken With Pineapple and Peppers

I like the recipe and it's a keeper! I modified it to suit my taste and will be making this again. I used many additional vegetables such as water chestnuts, straw mushrooms, carrots, broccoli and cauliflower.

Carrot Chile and Cilantro Soup

A very delicious recipe and simple once all the veggies are cut. I did virtually double the recipe, except for the onion and chili paste and used 3 cans of chicken broth in place of the vegetable broth. Wow.. just have to say that my version had a KICK with the chili garlic paste that I used from the Asian market (with the green cap). It was very hot and spicy. Of course you can easily adjust this to your taste and even modify with chili powder or red pepper flakes. Definitely a keeper, especially since it's so healthy!

Black Bean Vegetable Soup

Excellent tasting healthy soup! I agree with the previous reviews and would recommend that you decrease the stock to 3 cups or even 2.5 cups for a thicker soup. Plus, cilantro adds a nice touch!

Spinach-Stuffed Steak

This was an excellent meal choice! I did modify the recipe, as I did not have a jar of roasted red peppers, I roasted my own green with a little olive oil and then splashed with balsamic vinegar. The steak did take about 1:30 hours to cook and I used the thinest steak that I could buy. Oh, I also added some beef broth to the baking dish and carrots/potatoes to round out the meal.

Mini Corn Dogs

I'm not a huge corndog eater, but I would say this recipe is just okay. I followed the recipe exactly, but found that the finished dough could have used some sugar. Plus, you will need nearly 1/2 cup more flour for rolling the dough out.

Easy Hummus

One caveat on my rating.. I did add to the recipe, but as another reviewer said, this made a great base to start with. I used all ingredients noted and added a splash of olive oil, 2 TBSP red onion, 1 tsp red pepper flakes, 1 TBSP cilantro, and sea salt and pepper. Also, I needed to add about 5 TBSP total of the garbanzo juice to thin out the recipe. This was so delicious and perfect! I loved it and totally recommend, especially if you prefer your hummus wihtout the tahini.

Cranberry Pecan Salad

Really delicious but I had to give 4 stars, not 5, due to the very high fat/calorie content. This is a great recipe for special occasions :-) I did modify the dressing to include some garlic powder and lemon juice (two essential elements for any dressing to remove some of the oil taste). I think you could also stretch out the lettuce needed to 10 cups or so. I used candied pecans (skillet fry pecans with spray butter and brown sugar) and blue cheese.. Delish!

Cream of Cauliflower Soup II

Delicious and very gourmet soup recipe. It takes a bit of time to cut up the vegetables but is well worth the effort. I would not exceed the 1/8 tsp of nutmeg as it almost overpowers the natural vegetable taste. Also, use very fine black pepper to avoid a gritty taste. Recipe is very yummy!!

Irish Cream Bundt Cake

This one is a keeper! The cake is moist and delicious even days after you originally make it. The recipe did produce extra glaze, so you may want to reduce by 1/3 or so.

Exquisite Pizza Sauce

Great fruit dip recipe! Tastes better after a few hours in the fridge as it gets creamier. This recipe is the best fruit dip - way better than the marshmallow/cream cheese combo.

Best Spanish Rice

This recipe is really easy and very good, but I would agree with the other reviewers..cut down the rice to 1 cup and do not brown the rice. Also, I added about 2 tbsp of green pepper and 1 tsp of minced garlic to the recipe and it was great!
