Too Much Chocolate Cake

Made this for my son's 12th bday today & it is absolutely AMAZE-BALLS!!! I usually don't rate recipes if I didn't follow exactly, but this recipe was a great base. I made adjustments because I couldn't find 18.25 size box cake mix & also because I'm not fond of baking cakes using box cake mix. Figured I would give this recipe a shot since the reviews were so great. I used 15.25oz Betty Crocker Super Moist Choc Fudge, 2 sticks of real butter (in place of the oil), 1/2 cup brewed coffee (instead of water), 4 eggs(added 1 at a time), 1 cup sour cream, 1 tbls vanilla, and the full 2 cups of mini semisweet. Baked at 325 in a dark nonstick bundt cake pan for 1 hour...or maybe it was 1 hour 5 mins. Anyway, the result did not disappoint! Literally MELTS IN YOUR MOUTH!!! Birthday boy was very pleased! **Forgot to put in the pudding mix, but the cake mix I used already had it in the mix. Not sure if it would have really made a difference** Still turned out SUPER MOIST & tastes like it was made from scratch.

Secret Ingredient Pico de Gallo

This was fantastic! Loved the zip that the dill pickles gave to this recipe! Took advice of others & added lime juice & minced garlic...YUM! I made 2 batches, 1 spicy & 1 mild...both gone in record time!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

AWESOME sauce! I have made this sauce several times with no changes and it comes out finger lickin good every time! I make my own rub for the ribs (smoked paprika, cumin, chili powder, dark brown sugar, red pepper flakes, soul seasoning) wrap in foil as recipe states and they are fall off the bone DELICIOUS!! Rave reviews from family and friends...always have to double/triple the sauce. Can never make just 2 lbs...usually have to make 6-8 slabs!!

Mexican Shrimp Cocktail

Strawberry Spinach Salad I

Best salad ever! I substituted pecans for the almonds, added feta cheese like others suggested, and used balsamic vinegar instead of white...FABULOUS!! My kids even loved it!! Will make again and again.

Merwin's Shrimp Gumbo

Thank you Merwin! This was fabulous!! I took the advice of others and left in the chicken. I also used andouille as well as smoked sausage. There were NO LEFTOVERS!! Everyone raved about it and everyone has requested that I make it again this weekend! This time I will add crab!!

Shrimp Scampi V

OMG! This was absolutely the best!! I took the advice of other reviewers and added more garlic, 1/2 wine, 1/2 chicken broth, lemon juice and I also added a little cornstarch for a little thicker sauce...it came out PERFECT!! It was quick & easy and my kids gobbled it up. My fiance said it tasted better than any he ever had at a restaurant. I will definitely make again and again!!

Southern Candied Sweet Potatoes

This is the one dish I could never master, but now I am THE MASTER!! The only change I made was to use 1 cup of brown sugar & 1 cup of white sugar. I have made these numerous times now and they come out perfect every single time!!

Glazed Meatloaf I

Made this with ground turkey & it was absolutely fabulous! This will be the ONLY way I make meatloaf from now on! I took everyone's advice and doubled the sauce & I am happy I did. Made meatloaf paninis the next day & they were to die for!!
