Super Duper Zucchini Muffins

SO GOOD! I only made a couple slight changes to this. I didn't have shortening so I used margarine. I omitted the walnuts and added a shredded carrot as suggested by another reviewer. Also instead of sour milk I used greek yogurt. They took a little longer than 20 minutes to bake because I overfilled the cups. They taste amazing. Incredibly moist. I will definitely make these muffins again. I like that the recipe is easy to throw together in basically one bowl with one spoon without having to dig out the mixer.

Jo Jo's Favorite Banana Muffins

I made these using paper muffin cups and they stuck to the paper. Other than that they taste really good and smelled amazing while baking. I followed other reviewers advice and used yogurt in place of milk. I mashed Honey Strawberry Greek Yogurt in with the banana and cut the sugar down to 2/3 cup. Next time I will not use the paper cups.

Shepherd's Pie

This was quick and easy to make and really good. I used frozen mixed veggies (peas, carrots, corn & green beans), added some garlic and italian seasoning to the meat as it cooked, and melted some cheese on top at the end. It could have used more salt. It was the perfect amount for four people.

Candy Bar Cookie Squares

These are very good. I'm making this for the third time tonight. I tried a chocolate cake mix with Reeses Cups and it was really good, but I think the yellow cake mix with the Snickers are better. The batter is crazy thick but I put a little cooking spray on my hands and pat it down in the pan. They keep well in an airtight container.

MMMMM... Brownies

I followed the recipe exactly. Super easy and super chocolately! Yum! I put the leftover 1/2 cup of chocolate chips on top. Way better than boxed brownies. I will definitely make this again.

Quinoa Tabbouleh

I made this just now for a get-together tonight. I followed the recipe except for carrots (didn't realize we were out) and I used a little over a third of a cup of dried parsley since my grocery store seemed to be out of fresh. I always cook my quinoa with a chicken boullion cube (even though it kills the whole vegan concept) I did that instead of the pinch of salt. I was sketchy about this recipe and I had a back up plan just in case, but I think it turned out AMAZING!! I'm excited to see what the crowd thinks tonight.

Sloppy Joe Sandwiches

Pretty yummy. I didn't have any worcestershire sauce or onion powder. It didn't matter. I cooked green pepper and onion with the hamburger and added a just a tad more brown sugar and used a little over a tablespoon of mustard. Delish!

Bacon Water Chestnut Rolls

These were a huge hit at Thanksgiving. I've been asked to make them again for Christmas. I doubled the recipe and used equal parts for the sauce (1/3 Cup each) I started cutting the bacon into thirds when I realized I was going to run out of bacon way before I ran out of Water chestnuts. The ones that I used a half slice of bacon on tasted better though. They went so fast that I have to double the recipe. Next time I will buy two pounds of bacon to be on the safe side.

Turkey Brine

This was very good. I have never tried brining the turkey before. I was pleased with it. It was very juicy and tender. I thought I bought enough veggie broth to equal a gallon but turned out there were only 1 2/3 cups in the can that said there were 2 cups. I topped it off with apple juice and a dash of extra sea salt. I will use this recipe every year from now on.

Clark's Quiche

I made this for mother's day brunch today. It was a hit. It looks elegant and presents really well. I bought deep dish pie crusts and didn't have a big problem with overflow but do line your baking pan with foil. I made no modifications today but next time I might add some green pepper or some sun dried tomatoes. Very good recipe there was none left over.
