Ham Tetrazzini

We loved this recipe, even the kids! Would be very easy to modify to use whatever meat you have on hand. Also, we made a little more pasta than the recipe called for, so we just added a little milk and a little extra cheese to the sauce. Turned out great!

Zucchini in Sour Cream Sauce

I really liked this. I cooked my zucchini too long (my fault), so it turned out more like a zucchini chowder. Still yummy, though. The only thing I didn't like was the sugar in it. Next time I'll make it without.

Fried Rice Restaurant Style

This was yummy! I used a combination of leftover brown rice and freshly cooked white rice. I also added an extra egg, as I made this for my kids for dinner, and wanted the extra protein. I also used the sesame oil, because I love the taste of it. This recipe is definitely going into the rotation!

Slow Cooker Chicken Taco Soup

I make this soup often. It is filling, and not terribly high in calories. Excellent with cheese or fresh avocado added. I have never added the beer, and we've never missed it!

Beef Nacho Casserole

This is so, so good! The whole family loved it, and we finished the pan in one meal. Next time I'll double the recipe. I also think this would be good if you used black beans to stretch the meat a little. Would also be cheaper to make that way!

Spicy Slow Cooker Black Bean Soup

I love the flavor of this soup. As others have suggested, it can be dressed up with avocado, sour cream, cheese, tortilla chips, onions, etc. Also, when the family was tired of soup, I drained the liquid off and used the beans as filling for burritos and as a topping for salads. This recipe makes a lot of soup!

Easy Skillet Supper

We really like this dish. It was easy and tasty--surprisingly so. However, I don't know how you could put the beef in raw, unless you have very lean ground beef. I cooked my beef first, then assembled the dish in the skillet. Requires more than 45 minutes to cook, though; our potatoes were still crunchy. I also used home-grown and preserved corn, which I think made a big difference.

Chicken Caesar Pasta

This was ok. I served the pasta and chicken chilled, but my husband and I still didn't like the lettuce with the pasta; too wierd for us, I guess. My two kids loved it, though! I would make this again, leaving out the lettuce, and maybe adding some red bell pepper for a little crunch and variety.

Creamy Potato Sticks

To Die For Blueberry Muffins

I just made these for the first time last night, and they are delicious!! I used all the crumb topping, since my husband and I love it. I also used frozen blueberries. Next time, I think I might double the batch and make it in a cake pan, sort of like a blueberry coffee cake.

Dad's New Zealand Mince Stew

Ancho Tortilla Soup

This soup is so good and filling! My husband loves Mexican food, and he said this is the best dish I've ever made. I accidentally bought garlic flavored chicken broth, but it didn't hurt the flavor at all. I also used a can of the diced tomatoes with green chilies in them. Awesome!

Broccoli Cheese Soup

I made this soup for the first time for my husband tonight, and we both loved it!! It turns out nice and thick and has great flavor. I think next time I might add a little more broccoli, and maybe a few julienned carrots and some potato. A meal in itself!

Barbecued Beef

I made this the first time for my husband and I, and have made it several times since, for parties and carry-ins. It is wonderful!! I follow the sauce recipe exactly. I do recommend getting a well-marbled cut of meat because a really lean cut gets too chewy and stringy. Plus, you pull the whole thing apart, so it's easy to get rid of most of the fat. Great for leftovers, too!!
