Cinnamon Rice with Apples

Delicious! I substituted a mix of brown and wild rice. Package directions said to simmer 45 min, so I added apples and everything else 15 min before the end of cooking. I also substituted dried cherries for raisins and added 1/2 cup of chopped pecans.

Crispy Barbequed Tofu Slices

Yum! Use the most delicious BBQ sauce you can find. The flavor was amazing, but the strips lost some crispiness in the oven. Next time I will try baking first, then frying as other reviewers suggested.

I found the recipe as written a little bland. I used half broth and half water, and I would definitely substitute broth for the full amount of water next time. I would probably add some garlic at the beginning as well.

Buttermilk Honey Wheat Bread

i would definitely reduce the amount of buttermilk in this recipe, maybe by as much as 1/2 cup ... i had to add a lot more flour to get the dough to the right consistency. Although the flavor and texture of the bread was great right out of the oven, it didn't hold up the next day. toasting and buttering is definitely needed the morning after.

delicious!! the flavor of this bread was wonderful, the inside was soft, and the crust was crispy but not too hard ... i wouldnt change a thing. braiding makes a nice presentation.

Irish Brown Soda Bread

i tried this recipe twice, and was twice disappointed. although the taste was passable, the texture was odd - like thick oatmeal, with the consistancy of glue. concerned that i had handled the dough too roughly on the first try, on the second try i let the formed loaves rest a bit before baking, but that didnt help. the crust formed well though; perhaps the addition of an egg would lend the innards a more "bread-like" consistency? although i found the bread inedible on its own, the recipe wasnt a total waste - the sturdy crust and tough innards stood up very well as a bread bowl for tomato lentil soup :)

Chewiest Brownies

WOW. these are definitely the chewiest, fudgiest brownies ... but the recipe itself only gets 4*. maybe my eggs were too small, but the "batter" i ended up with at first more closely resembled coarse crumbs ... i added some plain, lowfat yogurt and the texture was perfect. i baked these in a 9" round pan and had to keep them in the oven almost an hour. with some chopped pecans, these are perfect brownies!!

Apple Cinnamon Oatmeal Bread

yummy! leaving off the topping does not affect the taste of the bread and reduces mess. instead of the applesauce, i chop one large granny smith apple and use just a few spoonfuls of applesauce for moisture.

Simple Maple Syrup

fantastic base recipe. i am currently living in belgium, where maple syrup is not sold, but i was raised in north america and miss my classic pancakes and syrup! vanilla and other extracts make nice substitutes for maple ... i also follow the advice of other reviewers and use brown sugar and butter.

very good ... granny smith apples lend a nice tartness ... VERY sweet with the topping, i usually leave it off. i have also tried this with cocoa powder instead of chips ... in which case i add a little apple sauce to the batter for moisture and to strengthen the apple flavor against the cocoa powder.
