Six Can Chicken Tortilla Soup

As it reads I gave it 3 stars. I doubled the recipe to make 12 servings. It's a great starting point. After tasting and it was too bland I added about 4 cups of chicken stock made from boiling a roasted chicken. Then I added about 2 tablespoons of prepared taco seasoning. Simmered for 20 minutes and served with 2% shredded Mexican cheese and Fritos on top. Was much much more flavorful. We loved it and I have several more meals left of it ;)

Cottage Cheese Chicken Enchiladas

We loved it. Used rotisserie chicken. It was easy fairly quick and delicious. My kind of meal. I buy two rotisserie chickens at our Sam's Club each time I go for $4.99. Debone them when I get home date the package and freeze in 2 cup portions so I always have chicken ready to put into a recipe. Makes this meal a snap. I will be making this a lot. Thanks Annabell for sharing this recipe.

Baked Zucchini Chips

We liked these very much. I put a lot more parmesan cheese on them though. Don't forget to oil your pan. I forgot and they stuck, big time but we still very tasty. Will definitely be making these often. Gave these 4 stars because I save 5's for knock your socks off - to die for recipes.

Amish Macaroni Salad

VERY GOOD. Definitely make the day before or even make the sauce part of the recipe a couple of days before. I really don't like macaroni salad but I made this for hubby and I actually did like it quite a lot - hence the 4 stars. Hubby LOOOOOVED it. It does make plenty of sauce and I had left over pasta the next week so I just made a smaller amount again. Hubby was very happy.

Not near enough flavor for me but then I like LOTS of flavor. I followed the recipe and didn't add or change anything but I was so disappointed and I hate to write a bad review. Just wondering what I could have done wrong because there are so many good reviews.

Chicken Wild Rice Soup

While I did not think that this was 'to die for' recipe it was very good and I will make it often. I wish I could give this 4&1/2 stars (I reserve 5 stars for 'to die for' recipes) but this was better than a 4. For time saving reason I put all of the veggies I was going to cut up into the food processor at one time and chopped into largish chunks (1/2"), sauted them in a little olive oil until onions were transparent and added them to the pot with the other ingredients and cooked until veggies were done. Good comfort food.

Potato and Ham Soup

This was very good soup. We liked this a lot and will definitely be making it again but with a few changes for our own taste. I did change 2 things this first time. I only had one can of cream of celery soup so that was all I used. I actually am glad that was all I had because I felt, to my taste, that the cream of celery was overwhelming for a potato soup. Then I used Half & Half instead of all heavy cream (which I would again). I think next time I will use either just cream of potato soup or maybe one of each (potato and celery). I will definetly be making this a lot as it is a good base but just with my own personal tweaking. Thanks for sharing Tabitha.

Slow Cooker Spicy Black-Eyed Peas

Very tasty soup. Made 3 weeks ago. My other half is not especially fond of black eyed peas but he loved this and asked me this morning when was I going to make it again. He also told several of our friends how much he liked it. So I am making it today. The only change I made was I only used about half of the called for amount of cumin because I don't love the flavor of it. A little cumin goes a long way for my liking. I wish I could rate it a 4 &1/2 instead of 4. I try to save 5 stars for stuff that absolutely BLOWS me away. I will be making this again and again and again.

Super Sausage Gravy

Doubled the ingredients and had it for Christmas brunch with homemade biscuits and it was a big hit. Very tasty. Better than most I think because I find most to be too bland. Other than having to use Jimmy Dean sausage I think that I followed the recipe exactly. Will definetly make again.

Make Ahead French Toast

First I like to say I made NO changes to the ingredients of this recipe. I did double this recipe and made it for Christmas brunch in my home along with two other breakfast casseroles. One was Chessy Ham and Hash Brown Casserole from Allrecipes (also gave a 5 star rating), Super Sausage Gravy from Allrecipes (also gave a 5 star rating), which we put over my brothers homemade biscuits, and my sister-in-law Vickie's Egg Casserole (that you put together the night before, gosh I love those recipes that you fix ahead of time). I was planning on 15-18 people. When I first made the Make Ahead French Toast it had no topping yet (and of course uncooked) it didn't look good at all. In fact I almost threw it out but I didn't, thank goodness. Once the topping is spooned over the next morning and it is baked to a golden brown it was heaven. Got tons of compliments. I have family members who do not like nuts so I made one side with nuts and the other side without. I ate the nut side and it was fantastic. The bread was fine uncut and I wouldn't neccesarily worry about cutting it up either unless I used a bread with a tough crust. Only dipped bread in liquid long enough to soak it WELL and then I DID NOT pour any remainder of liquid over the casserole. Turn out perfect. Very rich meal though but I only do it once a year. Thanks for sharing the recipe. Debbie. I WILL be making this again.

Ham and Broccoli Bake

If I could I would give this 4 & 1/2 stars. I save 5 stars for super exceptional stuff. My husband loved this and I have to say it was quite good. First I used regular linguini pasta instead of whole wheat rotini. I used 1 (10 oz) container of Buitoni regular alfredo sauce and 1 (10 oz) container of Buitoni light alfredo sauce from the cold case at the grocery store. I have used the jarred varieties of alfredo sauce before and have never been satisfied with the taste of any of them so I thought I would try the more fresh version. I personally think that it was hands down much better than the jarred. I upped the milk to 3/4 cup intead of 1/2 and used 16 ozs of pasta. Then I used Kraft 2% Colby Jack Monterey but used 2 cups so it was a little cheesier. I found the recipe easy to follow and quick to put together. Definetely a keeper. In the future I will make it with shrimp or chicken as well as the ham. Thanks for sharing the recipe mrs. embee.

Fresh Strawberry Upside Down Cake

Took to a potluck and got lots of requests for the recipe. Easy to make, quick except for baking time, not to expensive. Will definetly make again and next time I may add a can of drained crushed or tidbit pineapple to the strawberries. I used a glass casserole dish and it stuck pretty good so I just left it in the dish and served with a large spoon, it looked yummy. Would be great served warm ala mode. YUM

Chicken Florentine Casserole

Excellent flavor. Relatively easy to prepare. Not terrible expensive and made with ingredients you may already have on hand. I used fresh baby spinach and layed down a pretty good layer of it on the bottom of the casserole dish, topped it with fresh mushrooms then the cooked shrimp and pour a double batch of the sauce ingredients over the top. That being because I wanted to serve it as sauce over linguini. I also added a small minced onion to the sauce ingredients. I used Progresso Mushroom Soup because I find we like the flavor better however it is ready to serve and not condensed like Campbell's so I withheld some of the Half and Half (fat free). I used only half the butter too. I realize that I changed a lot but that seems to be the way I cook. I truly think it would still be great even if I hadn't. Thanks for the great recipe BRYAN0320

Napa Cabbage Salad

Wonderful. Everyone and I mean everyone loved it. I keep the dressing and the toastd crunchies made up and a bag of shredded cabbage in the frig and throw it together a couple night a week. Sometime I throw in some mandarin oranges or pineapple tidbits. Delicious. Really wonderful.
