Laura's Unbelievable Chicken and Pasta

Made this for dinner tonight. I used a can of mild Rotel tomatoes instead of the fresh cherry tomatoes, and used fresh spinach instead of frozen. This is the second time I've made this and it's REALLY good! The slight spicyness of the Rotel adds good flavor and just a bit of heat. My kids (ages 6 and 3) ate it! Definitely a keeper!

No-Fuss Rolls

These are great! I made them for breakfast this morning b/c we were completely out of bread, and needed something bread-ish with which to feed my littles. next time, i may add Craisins and orange peel to the dough, then they will be like scones in a muffin tin! UPDATE: Made again this morning for breakfast, only this time I used Bisquick instead of the self-rising flour, and then used half butter and half mayo for the mayonnaise part. Added about a tsp of cinnamon and about 1/4 cup of raisins.....so basically I made cinnamon raisin biscuits. After I took them out of the oven I put some vanilla frosting on top......DELISH!!! They tasted awesome! Try it!

Pineapple Fried Rice II

Made this for dinner tonight and it was delightful! My husband had at least three helpings, and he's not even that crazy about anything even remotely asian or soy-sauce-ish. My kids ate it too without too much prodding. I made the "Thai-Style Peanut Sauce with Honey" from this site to serve on the side....awesome.....also served with thai sweet chili sauce. Fresh cucumber slices and blue cheese dressing on the side. GOOD MEAL!

Slow-Cooked Flank Steak

This is really tasty! I served with white rice and broccoli. I was hoping to be able to slice the steak, but it just shredded when I cut it. Also, the next morning, I threw the leftover steak in some scrambled eggs for some awesome "steak and eggs" breakfast! Will definitely make again. update: I've made this several times now, and it's always good! Because flank steak cooks very quickly, I've found that I can put in my slow cooker for only 1-2 hours on HIGH and it comes out PERFECT, and I can slice it very pretty! Great Flavor, Great Recipe! Try it!

Nordy Bars

Absolutely the best! I used peanut butter chips instead of butterscotch b/c that is what i had on hand, and had to substitute some baking chocolate for some of the chocolate chips, b/c I ran out...these were still fabulous! I took them out of the oven just a bit early, so they are perfectly moist and a bit gooey, just like a i like them! I will definitely make them again....I can't wait to try them with butterscotch chips! Definitely a KEEPER!!

Ground Beef Enchiladas

VERY Good!! surprisingly delicious for really so few ingredients! And I just loved the creamy sauce on top...I was out of yogurt, so I used half-n-half (which I know is high fat, but it was all I could come up with)...anyway, my three year old AND my 13 mo old ate it! I also used a whole chopped poblano instead of the jalapeno. Excellent recipe, I will make it again and again I'm sure!!

Oat Applesauce Muffins

Thank you! Thank you, for this recipe!! They are fabulous, I even posted my own photo of the finished result!! I substituted 1 cup fat-free Stonybrook Farms organic yogurt b/c I didn't have buttermilk, and I added 1/3 cup date crystals to the oat/yogurt mixture to soak with the oats, and some grated nutmeg, and 1/2 tsp cinnamon. Also, 1/2 tsp. vanilla. These were sooooo good!! My three year old loved them!! The date crystals I got from a friend of mine, who gets them from CA, from the Shield's Date Farm, they have a website where you can order the date crystals. I don't know why, but they just add something special to muffins, it's soooo great!! Try it!

very good!! the croutons make it special!!! i used the real bacon bits by oscar meyer on top and it was great!! i will definitely make again!! i also added 8 eggs and used hickory farms sweet hot mustard for the prepared mustard.

Crunchy Cheese Crisps

These are surprisingly delicious!! thank you for the recipe. I need to snack on lower carb snacks these days, and so I substituted crushed Soy Crisps (by Quaker) for the potato chips and used whole wheat flour for the all purpose, and they really were GOOD!!! Try it !!

Slow Cooker Cranberry Pork

I made this for dinner tonight!! It made the house smell wonderful!! I used a bone-in pork loin and I seasoned it with salt/pepper and then seared it in a hot pan with olive oil. Then put it in the pot with all the ingredients exactly as listed. It was wonderful!! I cooked it on high for about 3 1/2 hours and the meat was falling off the bone!! There was lots of sauce, so I made a roux with 3T. butter and 3T. flour and then added all the sauce and it thickened it up. I sliced the meat and put it on a serving platter with the sauce/gravy poured over the top!!! It was so good!! My hubby had seconds and thirds and my 2 year old asked for MORE!!!! I served it with mashed sweet potatoes and green beans per another reviewers suggestion!! What a pretty dinner!! You could definitely serve it to company. The only thing that troubled me is that the meat is to tender that it's really hard to cut nice even slices, it pretty much shreds when you go to slice it. Oh well, it's still awesome!! Thanks for the recipe!!!!

Cheese and Garden Vegetable Pie

I made this for dinner the other night and it was delicious!! I made it exactly as written and it's very rich and tasty! I do weight watchers and 1/8th of a peice of pie is 11 points. Or, if you use light mayo and turkey bacon it's 6.5 points. My husband also loved it!! Thanks!

Lentils And Spinach

This was pretty good and hearty. My husband liked it!! I also added some crushed red pepper and chili powder to the seasonings and I served it on top of cous-cous and toasted pita on the side. I'll definitely make it again, but I'll add some bacon or proscuitto in with the sauteed onions, and also top it all with some Raita (Garlic Cucumber Yogurt Sauce) with the toasted pita. Really quite satisfying and also extremely cheap to make, which is great for those on a tight budget!!!

Pasta with Roasted Butternut Squash and Sage

I made this last week for dinner. It was pretty good. My husband really liked it. I only give it 4 stars because it's not very pretty, the dish looks all tan-colored to me. BUT, I don't like to dice the squash b/c it's kinda tedious, so I roasted it, and therefore the squash was basically added to the pasta in a smashed state, not diced, so that's why it's not as neat and orderly as it should be.
