Beef Samosas
Very tasty. I skipped the beef and the samosas were still wonderful. I used the recipe for the filling from allrecipes and then used the moosewood cookbook recipe for the wrappers and dipping sauce. I also doubled the cumin. Wrappers: 2.5 cups of flour, 1 cup of yoghurt/buttermilk, 1/2 tsp salt. Roll pingpong ball size double balls into 5 inch circles and fill with mixture. Brush tops with oil and bake for 30 min in a 400 degree oven. Dipping sauce: 1/2 cup cider vinegar, 1/2 cup water, 1/2 tsp salt, 3 tbs brown sugar, 1 clove garlic (minced). Mix it in a saucepan and simmer for 10 minutes (volume will reduce). This was delicious. Thank you!

Green Bean Casserole II
Classic recipe. I substituted the French-friend onions by some pan friend onions to cut back on the fat. The baking time needs to be far longer than 30 minutes. After half an hour, the beans are still very crunchy and half frozen. It took almost 1.5 hours before it was well done. However, taste was very good when it was finally done.

Sean's Falafel and Cucumber Sauce
Best falafel ever!!! Very tasty... I just made another batch. This time I omitted the salt since the canned chickpeas already have enough salt in them. The prepared mixture keeps well in the frigde for a few days, so you don't have to fry it all at once. To cut back on the mess and the fat, I used the George Foreman grill instead of the deep fryer. Just use some of the spray oil, and the patties still come out moist and golden brown. Thanks for sharing!!
