Michele's Ground Beef Casserole

Made this and maybe it was the frozen vegetables that were in it, but it was only ok. Next time, I think I will use some fresh vegetables and maybe some biscuits instead of the crescent rolls. It was just missing something.

Italian Meatballs

These are fantastic meatballs with great flavor. I reduced the amount of bread crumbs slightly, as the amount called for sounded like they would dry them out and it was a good call. Excellent flavor and pretty easy to make.

Best Steak Marinade in Existence

This is probably more like 4 1/2 stars, as I didn't have the lemon juice to add to it. With the lemon juice, it would be even better. Does a wonderful job of tenderizing the meat. I have made this a few times now and still have yet to add the lemon juice. I let my ribeye's marinate for about 6 hours each time.

Homemade Taco Seasoning Mix

This is a great, easy to make taco seasoning. I made a bigger batch, filling 2 small mason jars. My wife and I like our tacos a little spicier, so I added a little bit more cayenne pepper and crushed red pepper flakes than it calls for. It was excellent, 2 tbsp. of mix and 3/4 cup water to 1 lb of ground beef. Lots of good spice and flavor, highly recommended.

Bob's Mexican Stuffed Chicken

Excellent. No other words to describe this one. I made this for dinner on a Monday night for my wife and I, and on Wednesday, she called me from work to ask what she needed to get at the store for me to make it again. It is time consuming, but very very tasty.

Apple Stuffed Pork Chops

I think the ratio of apple to bread crumbs was a little off. I think if I made these again I would make a brine with some apple cider before stuffing and baking them to add a little more flavor.

Peanut Butter and Apple Stuffed Pork Chops

This could've used a bit more apple in comparison to the bread crumbs, but the basis is there. Good flavor. I would maybe add a little cider as a brine before stuffing and baking them if I made them again.

Chicken Spaghetti III

My wife and I loved this recipe! Instead of using a can of Rotel for the diced tomatoes and chili peppers, since we both aren't big fans of tomatoes, I simply added a can of dices green chiles. I also boiled my chicken breasts in chicken stock to keep them nice and moist. I made this for my in-laws not long after we had it the first time and got yelled at because there wasn't enough! Awesome recipe.

Bisquick® Sausage Balls

I believe this recipe calls for too much Bisquick. I ended up with doughy balls of baked Bisquick batter with a little bit of sausage in them. If I made this again, I'd cut the Bisquick in half and add a little more sausage.

Triple Dipped Fried Chicken

This calls for a bit too much flour in the recipe. It drowns out the rest of the herbs/spices with it, so I cut it in half the 2nd time I made it and it was wonderful. I highly recommend using half as much flour and adding more black pepper to your liking. Paprika and red pepper are a must as well.

Grilled Salmon

I would've given this 5 stars, as it was a VERY good marinade for salmon. The lemon juice accents the fish wonderfully. However, there is something missing. I added some red pepper to it, and think that I should probably have added a little more. It needs more flavor, and I think the red pepper is it, just more than the 1/4 tsp. that I added. Maybe more like 3/4 tsp. would do it.
