Italian Kale
I used Kale AND collard greens just to have more veggies. Then I chopped up some chicken sausages from Costco and stirred it in until warm. The whole family loved it!

Cabbage Soup II
Very flexible recipe! I used ground beef instead of ham, left out the barley and added some macaroni noodles at the end. Also I used pre-made veggie broth. I did not have to cook it quite as long. Maybe 45 minutes. It would be great in the crockpot too after browning the meat. As other reviewers mentioned the flavors of the garlic and onions really carry the recipe. I was able to add some other left over veggies from the fridge (green beans) and it was great! My hubby took it today for lunch which is always a good sign.

Tomato Spinach and Basil Soup
This IS a very versatile recipe. I simmered the onion and garlic in water, left out the sugar and replaced the milk with rice milk and my family (which includes 5 kids) still loved it. Even my picky son who was so upset that I put spinach in his tomatoe soup. I did ladle out about half the soup into a blender to puree. It gave it a smoother texture overall. We served it w/ croutons on top and it was delish' !
