Raspberry Sauce

Simple to make and very good. I used frozen raspberries but didn't add the orange juice. Could have used a little more sugar (berries were pretty tart), but I was going to serve it as a topping for a lemon pudding cake and thought the tartness of the sauce would go well with the cake. It did. I'm saving this one to my recipe box and will use again. Thanks!

Lemon Pudding Poke Cake

I made the cake using the directions on the cake mix box, using the whole egg option (vs. egg whites), plus I added 1 tsp of lemon extract. The baked cake was high in the middle (maybe because of the whole eggs?), so I used a knife and cut it down so the top was fairly level and even across. I wanted to leave it in the Pyrex 9x13 dish I baked it in (vs. plating it and turning it upside down, though I guess I could have put it back in the baking dish after flipping it; oh well). I thought the pudding would cover up the cut area and it wouldn't be noticeable. The pudding was opaque and you could see the cut area through the pudding. So, I spread a layer of cool whip over the top, "icing" the cake, which hid the cut area. I refrigerated the cake overnight and took it to an office lunch the next day. Everyone really enjoyed it. I made a simple raspberry sauce served on the side as an optional topping and the tartness of the sauce went well with the sweetness of the cake. May make it again, or a variation using a different flavor mix, pudding, or both.

Pineapple Angel Food Cake I

Easy and delicious! I added a teaspoon of vanilla extract and didn't serve it with whipped topping -- doesn't need it! However, I think I will try mixing a small can of drained crushed pineapple with the whipped topping and using it to ice the cake which others have posted. Might add some chopped pecans. This is a definite "go to" recipe!

Pineapple Angel Food Cake II

So simple and so delicious! I may add some chopped pecans next time I make it, but it is perfect as written. A friend said you can substitute a can of blueberry pie filling for the pineapple. I plan to try that for my husband who loves blueberries.

Chicken and Stuffing Casserole

I made this for an office pottluck luncheon and came home with an empty dish! Instead of boiling the chicken, I used 8 boneless chicken breasts, seasoned them with salt and pepper, then baked them for about 30 minutes, until juices were clear. After they cooled, I chopped them in bite-sized cubes (about 1/2 inch size). I did this the night before so the chicken went in the fridge until the next morning when I assembled the dish. I also mixed together the sauce ingredients the night before and put it in the fridge until needed. Like another reviewer, I also used the cream of chicken with herbs for extra flavor. Since I didn't boil the chicken, I used canned chicken broth. After everything was assembled in the dish, I used a fork to poke around on top of the casserole before it went in the oven, making sure the sauce was well distributed. Turned out great, moist, flavorful, and like I said, no leftovers!

Slow Cooker Creamed Corn

I made this for an office potluck meal and everyone really liked it. I used two 32-oz. bags of frozen corn which is 4 times the recipe amount. However, I only tripled the other ingredients -- 3 sticks of butter, 3 blocks of low-fat cream cheese and 1 1/2 cups of milk etc. It came out very saucy and probably would have worked with only doubling the other ingredients. This isn't like traditional cream corn like we make in the south since it uses whole kernel corn. If I make it again I think I'll try grating some of the corn in my food processor to add corn flavor & texture to the sauce.

Garden Veggie Pizza Squares

Very easy to make, very tasty, and even the "veggie" averse enjoyed it! Half-pack of the ranch dressing seasoning pack is more than enough. We finely diced the veg and gently pressed them into the cream cheese. Will definitely make it again. Great recipe as is.

Chicken and Shrimp Jambalaya

This is one of the best jambalaya recipes I've made. The spices used and the chopped jalapenos give it a wonderful flavor & just the right amount of heat. I've made it with only the chicken and shrimp (leaving out the ham & sausage), which is my favorite. This is now a family favorite.

Toasted Coconut, Pecan, and Caramel Pie

A friend brought this to an office luncheon & it was such a treat! She used a graham cracker crust which went well with the other flavors. I want to try making it in a 9x13 pan, cutting into small squares for serving -- it is very rich so I think small servings would work.

Holiday Peppermint Bark

This was a very easy, very quick recipe to make. It looks great & tastes great. Is a good gift for holiday giving and parties. Try it! (Next time I make it, I'm going to melt, spread and harden a bag of chocolate morsels for a bottom layer.)
