Beef Burgundy I

I was disappointed in this recipe. Definitely needs to be thickened quite a bit. It just wasn't that flavorful.

This recipe is a great start for a hearty winter soup. I used white wine & herb chicken broth for a bit more flavor. Didn't use any butter, but when serving covered top with fresh baby spinach and sprinkled the almonds on top. The spinach cooks when stirred into the soup. Additions make it a 5 star recipe.

Sweet and Crunchy Salad

Easy recipe. Added chicken to it for a great summer meal and used broccoli slaw instead of coleslaw mix. I think in the future I will try cutting back on the oil. My family enjoyed and have had good reviews at summer parties.

Amish Meatloaf

My family loved this meatloaf, and my son even ate the leftovers (he never eats leftovers!). I made according to the recipe, except I sauteed the onions ahead and made half the top sauce. Terrific!

Chicken Enchiladas I

I made a few adjustments. Added salsa instead of the tomatoes and water, and green chiles in place of the green pepper. Also added black olives. Will definitely make this again.

Pumpkin Cheesecake in a Gingersnap Crust

The only changes I made to this recipe was use pecans in place of hazelnuts and added some pumpkin pie spice. I did not use a waterbath and had a few cracks, which didn't bother me. The result was a fairly light, not overly "cheesy" flavorful dessert. It was exactly what I was hoping for and my family loved it!

Pico de Gallo Chicken Quesadillas

Baked Mango-Ginger Swordfish

My husband and I didn't care for this recipe at all. I tried it because I had the ingredients on hand. I usually grill swordfish, so maybe we didn't like it because it was baked. We didn't even finish it--a waste of an expensive fish.

Aimee's Quick Chicken

This was easy, but didn't appeal to my son or myself. Spreading the mustard as directed made it way too mustardy for both of us. May have been better to mix everything together and poured over the chicken before baking to blend flavors more. Chicken was very moist though!

Peanut-Ginger Marinade

Great combination of flavors. I only marinated the tenderloin for about 6 hours and it tasted great, although flavor would have been more intense had it been marinated overnight.

Asian Beef Skewers

I doubled the marinade, used 3/4 of it to marinade a larger flank steak. The remainder I tossed with raw shrimp for 15 minutes, then grilled them also. What a hit--everything was devoured!
